Dear Cook! It is with great pleasure and thanks to Hashem that we produce this Pesach Cookbook in draft form (second draft). Pesach is a very special Yom Tov. Every Yom Tov has its unique qualities. Each have their own Brochas and strengths which we get from Hashem. Matzoh is called the Food of Faith. One of the reasons we are so particular with the cleaning of Chometz, eating only hand baked matzoh, and being extra particular with food on Pesach, is that this Yom Tov strengthens our Emunah, our Faith in Hashem. In Lubavitch we are very particular on Pesach. We do not use manufactured goods, even with the most reliable hechsher. Many do not eat in each others homes, although they would not hesitate to do so during the year. Fruit and vegatables are only used if they can be peeled before consumption. We boil our sugar and tea before Pesach. A kosher un freilichen Pesach A little note about the above phrase: Before Pesach, Yidden have a Minhag to wish each other a kosher un freilichen Pesach. Kosher is an abbreviation for Kemotzie Shalal Rav Like one who finds a lot of booty. When we work hard before and during Pesach to keep the highest standards of Kashrus, Hashem rewards us with a lot of Shalal, booty, so we have Simcha and a Chag Hapesach Kosher Vesameach, a Kosher and happy Pesach. The lesson in this for Jewish children is that while were very careful that everything we eat is 100% kosher, we should also be careful that everything else about us, what we do and how we behave, is also 100% kosher. We should behave as is fitting for a soldier in Tzivos Hashem and not make a Chilul Hashem, Chas Vesholom.That is a victory against the Yetzer and brings Shala Rav a lot of booty. Another thing: Kemotzie Shalal Rav, when we find the booty, its not a physical war, but, rather, a war against an old and foolish king. The Shalal Rav brings happiness so we will have a Kosher AND happy Pesach. Taken from Sichos 18th Nissan 5745. This recipe book is in draft form (second draft). It was found that there is a need for a book which incorporates the Minhagim of Lubavitch for Pesach, without using manufactured goods. We are looking for a committee of people who would be interested in working on improving this booklet. We would like to add recipes and publish this in a way that it could reach a wider international audience. If you have any suggestions or recipes, however small, please tell us.

Many of these recipes are very obvious and simple. When asking for contributions, most people said their families prefer the plain foods, and were encouraged to share these too. While you use this booklet, jot down any ideas you have to enhance the Yom Tov of others. We were given a few recipes last year which have been misplaced. Our apologies for this and we would appreciate receiving a copy of these. We would like to extend our appreciation to the following contributors of recipes and suggestions of well over 100 recipes! Who said you had to have a very limited menu? Buy lots of fruit and vegetables and let your imagination fly freeely. Thank you to the following people who sent in their recipes. * Check pockets- especially of childrens clothing * Ensure sufficient wine, Matzos etc * Unseal boxes of Matzoh, ensure you have complete ones * Boil liquid sugar * Preapre tea essence * Think through the Seder: * Boil eggs for Beiza * Roast neck bone for Zeroia * Prepare charoses crack and grind nuts * Check through lettuce * Grate Morror * Prepare candles for second night * Adjust heating, hot water and stove * Cut up paper trowels and silver foil

Wet sliver foil sticks to almost any surface. Great for lining fridges, counters, etc. Smile and enjoy Yom Tov. Nothing is better than a happy mother! These tips and recipes are for the adventurous, dont feel obliged to follow them all. Liquid Sugar The whole purpose of liquidizing is to strain the sugar so it should eliminate anu possibility of Chametz. You will have to kasher the pot when you are finished making the sugar. Also, you have to make the sugar BEFORE Pesach. Boil a pint of water in a saucepan and when the water is boiling, pour in 1 packet of sugar and mix it well with a wooden spoon on a low light until the sugar dissolves. Prepare another saucepan. Put a metal strainer in the saucepan and put a white muslin colth inside it. When the sugar is dissolved, pour it into the 2nd pot through the muslin cloth. You will have to strain it as soon as it is dissolved otherwise it will become hard. If you are stuck with leftover sugar, put it back into the first pot and repeat the proccess, perhaps with another packet of sugar if you need it.

Tips for successful Pesach cooking


Invest in blender/food processer / shredder/ slicer/good grater. Make sure to have a few nut crackers and peelers. Before Yom Tov, prepare cut silver foil and paper towels. Encourage your children to crack as many nuts as possible. Liquid Sugar 2 This has to be done BEFORE Pesach. If you run out of it on pesach, you cannot make more. 2 poundsof sugar 2 glasses of water Put on medium fire. Bring to the boil, stirring all the time. Strain through a soft cloth. PS. Pot will need kashering after use. Kashering method: Bring water to the boil, pour out, rinse with cold water.

Tea Essence Prepare before Pesach: 20 tea bags or 125grm tea essence Tear tea bags open. Place tea essence/granules into pot. Add water and boil. Strain through muslin cloth. Refrigerate. Schmaltz
Remove fat from chicken.

Cook 1 1/ hours. Add onions for flavour.

Neshei Chabad UK Pesach Cookbook www.lubavitchuk.com Beat Eggs Eggs beat up best at room temperature Peeled Tomatoes To peel the tomatoes, place in a container and pour boiling water over to cover. Let the sit for 2 minutes, then run them under the cold tap for about 30 seconds. The peel should come off easily. Remove bones from chicken: A. With a sharp knife loosen the skin off the parts of the chicken except the breast. B. Cut off the wings C. Cut away and remove the carcass by the breast and the polkas and thighs leaving the skin intact D. You are left with a whole skin (dont worry about the holes etc) and two pieces of breast inside Put the stuffing laid on top of breasts and wrap with the skin Mashing Eggs When mashing eggs, try rubbing the egg against the masher, as if grating. It is much quicker and much less pressure than normal mashing but does the job just as well. Sweet Potato Use cooked orange sweet potato for sweetening instead of sugar. (The English sweet potatoes are not as sweet as the orange ones from USA, India or South Africa.) Chicken with Applesauce Chicken is good with applesauce Orange Ice Pops Pour freshly sqeezed orange juice into ice lolly molds and freeze, either with or without sugar.

Pesach Food Management Tips


Potatoes in cold water Keep a clean bucket of raw peeled potatoes in cold water, ready for use Morning Tip First thing in the morning, Boil a pot of potatoes Boil a pot of eggs Prepare a large cucumber salad Prepare a fresh fruit salad Have these readily available for anyone hungry. For supper, you can roast the potatoes or use them for a variety of dishes. Chol Hamoed favourite Cube cooked chicken (from the soup is fine) Cube boiled potatoes Fry with an egg for a filling meal.

Avocadoes 2 large avocadoes, mashed 1 onion, diced salt lemon juice Mix avocado and onion. Add salt and lemon to taste. Beetroot 1 large beetroot 1 small onion 1 Tsp salt 1 Tsp lemon juice Cook beetroot until tender. Slice. Dice onion finely. Toss beetroot and onion. Add lemon and salt to taste. Eggplant 1 eggplant 1 onion Peel eggplant. Wrap in silver foil. Burn/roast on open fire. Blend in processor with onion. Courgette 2 courgette (zuchinnis) 2 carrots 1 onion Slice everything and fry it all. Add salt to taste. Egg Salad 5 boiled eggs 2 small onions. Fry one onion in schmaltz. Dice the other onion finely half. Mix onion and eggs and mash. Avocado with Chopped Eggs Serves 6 3 avocadoes 3 eggs 1 Onion Boil eggs and chop them with diced onion. Slice avocadoes in half. Fill each half avocado with egg mixture. Citrus 5 Oranges 5 tangerines (optional) 3 pink grapefruit Liquid sugar Peel fruit. Cut up removing as much as possible the white skins and seeds. Add liquid sugar to taste. Serve in small bowls as a starter. Grapefruit Using a sharp knife, cut zig zag shape across centre of grapefruit. Decorate with slice of kiwi. Faigelach Boil eggs. Cut lenghtwise. Scoop out yolks. Mash yolks with schmaltz and salt. Fill up whites with yolk mixture. For wings, put kveckling (little pieces of schmaltz) on the sides.

Fish
Gefilte Fish Cooked eggs Grated, cooked, potatoes White Fish Raw eggs Salt Onion Grated carrot Mix ingredients well. Form balls and boil like gefilte fish balls. Gefilte Fish Pike or white fish Trout Eggs Onions Salt Mix well. Prepare broth of fish bones, carrots, onions and salt. Cook for 1 hours. Remove bones and vegetables, shape mixed fish into balls and cook for 1 hours.

Neshei Chabad UK Pesach Cookbook www.lubavitchuk.com Baked Fish Loaf Serves 6 1lb minced fish 1 onion, grated 1 carrot, grated two tabelspoons water. 1 egg. Salt to taste sugar to taste. Onion sliced for the bottom of the tin so it shouldnt stick Mix all ingredients together. Mixing in a mixer or food processor will help make the mixture thicker.Lay out the sliced onions on the bottom of a small loaf tin and put the fish mixture on top of onions. Cover with silver foil. Bake in a pre-heated oven at 175 C for 1 hour. Slice when cold.

Salmon Steaks Boil cleaned salmon steaks in a little water with lemon juice. Fish balls Use your usual recipe with eggs, salt and onions. Add mashed potato and /or ground almond to stiffen. Instead of boiling fish balls, make patties and grill until brown on both sides. Freeze in bags. Perfect to pull out of freezer for outings or a supper. Variation: Form into fish loaves and bake in the oven. Put a little water and onion in the tray. Cover so they will not dry out. When ready, roll in silver foil and freeze.

Meat
Fleishig Tzimmes 1lb chuck or goulash (chunks) 3lbs potatoes (chunks) 2lb carrots (chunks) 1 large onion (diced) Put everything into a large pot and cover with water. Bring to the boil and then simmer covered on a low heat for 6 hours, until the meat falls apart. If there is any liquid remaining, then boil uncovered. Mash everything together and reheat in the oven. Dark and Light Meatloaf Serves 10 Dark mixture: 1 lb mince meat 1 egg 1 onion grated 1 small potato grated tsp salt Light mixture: 1 lb mince chicken 1 egg 1 onion grated 1 small courgette grated 1 carrot grated tsp salt Preheat oven to 175 C. Mix together ingredients for a dark loaf. Then mix together ingredients for light loaf. Note: You can use either one long loaf tin or one medium square tin. Line tin with sliced onion to prevent sticking. Lay light mixture out on the bottom of tin. Pat dark mixture on top. Cover with tinfoil. Bake for 1 hour 15 minutes. Remove foil and bake uncovered for an additional 15 minutes. Hint:You can use either of the obve mixtures and make into balls instead. Just drop balls into salted boiling water and cook for one hour. Add in an onion in carrot. Chicken balls made very small look like kneidlach and can be served in the soup.

Citrus Chicken Cook chicken in citrus fruits on top of stove for 1 hours.

Chicken and Potato Omelette Leftover chicken from soup Cooked potato 2 eggs per serving (if you have a lot of chicken and potato, put in more eggs) salt to taste Dice chicken and potato into small pieces. Pour in egg and mix well. Fry in a heated, non-stick frying pan with a bit of schmaltz.

Lift chicken skin slightly and put in filling. Bake. Chicken Omelette Small amount of chicken fat 4 eggs Grated carrot Boiled chicken cut into small pieces Sliced onion Fry up carrot, pieces of chicken and pieces of onions (and any other vegetable which may combine well). Take out of frying pan, make an omelette from eggs and put the chicken and vegetables in it and fold the omelette. Meat balls Use your usual recipe with eggs, salt and onions. Add mashed potato and /or ground almond to stiffen. Instead of boiling meat balls, make patties and grill until brown on both sides. Freeze in bags. Perfect to pull out of freezer for outings or a supper. Variation: Form into meat loaves and bake in the oven. Put a little water and onion in the tray. Cover so they will not dry out. When ready, roll in silver foil and freeze. Meat Stew Different types of steak, goulash etc. Chicken fat Carrots Courgettes Onions Water Wine Fry up any type of meat, steak, goulash etc in some chicken fat. Add vegetables. Add water and some wine and let it stew until tender. Chicken roasted with Grated parsnip Grated carrots Chrein

White of Chicken Patties White of chicken Onion Potato Egg Salt Chrien Optional: Carrot Mince chicken with onion and potato and carrot. Add egg, salt and a little chrien. Make into balls. Fry like patties. Minced Chicken Ground cooked white chicken Soft boiled egg Raw onion Salt Blend together. Stuffed Chicken 1 Roaster 1 potato 1 onion 1 lb carrots 2 courgettes salt Take bones out of roaster leaving chicken whole with skin as intact as possible blend peeled vegetables with salt and some raw chicken. Stuff chicken wrap up in silver foil, bake or boil. Let it cool and cut into slices. (See TIPS for how to remove bones from chickens) Kebabs White chicken Pineapple Cut into chunks. Bake or grill on Kebab sticks. . Sweet n Sour Chicken Wings Chicken wings Lemon juice Sugar syrup Optional: apple pr pineapple Marinate

Meat and chicken Roll 1lb minced beef 1lb minced chicken breast (or turkey) 2 onion 1 grated carrot salt Grate onion and mix half with beef mixture. Spread it into a rectangle onto a piece of greaseproof paper. Mix the second half of grated onion with white chicken/carrot. Grate carrot and spread onto the beef mixture. Spread the white mixture and roll Swiss roll style. Enclose in generous greaseproof paper. Boil in seasoned water for one hour. salt Optional vegetables such as swede, courgettes, carrots) Put all ingredients in large pot. Bring to boil and then cook on low flame for one hour. Serves 8

Potato Parcel Boiled potatoes Chicken pieces Wet hands. Flatten some mashed potatoes in hand. Place some chicken in centre and roll it to hide the chicken. Fry. Chicken a lorange Chicken Slices of peeled oranges

Chicken Stew 10 medium potaooes (sliced thickly) 10 large tomatoes (blanched and peeled) 2 large onions (peeled and diced) 2 roasters (quartered) 4 cups water

Place slices of orange around the chicken. Put a little water in pot. Cook on low flame, checking to see there is sufficient liquid.

Soup
Vegetable Soup 1 onion 2 carrots piece of sweed parsnip 1 courgette potato Celeriac Peel all vegetables. Dice. Cook until everything is soft. Pour in blender, a bit at a time, and mix at high speed to puree the vegetables. Serve hot.

a piece of pumpkin or butternut squash (optional) salt Peel the vegetables and cube them/ Cook in water and salt or in chicken stock. Liquidise (blend). Serve hot. Creamy Green Soup This needs vegetables that will keep the green colour: 1 onion 1 celeriac 3 lbs courgettes 4 medium potatoes 1 parsnip Peel the vegetables and cube them/ Cook in water and salt or in chicken stock. Liquidise (blend). Serve hot. Courgette Soup 3 courgettes 2 carrots 1 onion Salt to taste

Creamy Orange Soup This needs vegetables that will keep the orange colour of the soup: 1 onion 1 celeriac 2 lbs carrots 4 medium potatoes 1 sweet potato 1 swede 1 parsnip

(Adjust amounts of vegetables according to personal taste or the quantity you need.) Meat Soup 1 onion 1 lb carrot 1 celeriac 1 small swede 1 parsnip 1 lb mince meat salt Same as above, or serve chunky style. 1 tsp salt and 1 tsp sugar Lemon juice 4 tbsp schmaltz 3 egg whites, beaten until stiff Mix all ingredients besides egg whites. Add beaten egg whites at end. Bake 175 C approx 1 hour Nut loaf Mix any ground nuts with lots of any grated vegetables and onions. Add egg to form firm mixture. Add salt to taste. You can add cooked mashed potatoes and carrots to bind. Bake in oven. Latkes Boil potatoes for mashed potatoes. Mash with egg. Add salt. Fry in schmaltz as latkes. Cholent Meat White potatoes Sweet potatoes Salt to taste Cook before Shaboos. Hint: Make double the amount needed. Keep on stove and use as Seudah Shlishis. Cholent Use the gravy from the chicken. Add water. Add potatoes. Add salt. Cook

Side Dishes

Stuffed Eggplant Eggplant 1 egg 1 onion 1 lb mince chicken Peel eggplant. Cut in half. Scoop out the middle. Boil the eggplant for 5-10 minutes. Put the chicken mince into a bowl. Dice onion and add to the chicken mince. Add egg. Mix together. Stuff eggplant with mixture. Bake in oven for 40 minutes.

Potato and Carrot Charlotte 1 cup grated carrots, cooked 15 minutes 3 cups raw grated, drained potatoes 3 egg yolks, beaten 6 tsp hazelnuts Carrot Kugel Serves: 1 loaf 2 cups grated carrots 1 sweet apple grated 4 eggs 2 T wine 1 T lemon juice cup ground almonds cup sugar Mix everything together and bake for 40 minutes on No 5 / 375 F / 190 C

Kugel
Kugel in Frying Pan Boil potaotes for mashed potatoes. Mash with egg. Add salt. Mix it in a mixer until it is creamy and smooth. It looks a bit like whipped cream before you fry it. Pour the mixture into a frying pan with a very little bit of schmaltz, on a very small flame. To turn over, turn the pan upside down onto a plate greased with schmaltz. Courgette Kugel Courgette Onion Egg A little bit of potato Peel and blend all vegetables. Fry in pan then bake with a little schmaltz. Potato Swede Kugel Serves 6 2 lb potatoes 1 onion 1 swede 2 carrots Grate everything in food processor. Season with salt and lemon juice. Bake for 1 hour, gas mark 4 / 350 F / 175 C Sephardi Kugel 2 large potatoes 1 carrot 1 small onion 6 eggs Salt Cut vegetables into very small squares this size. Beat eggs lightly, add salt and fold in vegetables. Put schmaltz in foil tin, heat in oven. Pour in ingredients and bake in oven until brown. Apple Kugel Apples eating Ground almonds Eggs Slice apples. Mix everything together and bake.

Many recipes are almost identical. We have chosen to write them all down. See which variation suits you most.

Add enough sugar to taste. Add water slowly, not too much. Roll in n balls and freeze. May be eaten frozen (Editors note: Try adding beetroot juice as food colouring) Nut Cake 6 eggs, separated 1 cup of liquid sugar 2 cup of nuts Wisk egg whites until stiff. Add sugar and mix again. Add nuts until the mixture reaches the desired consistency. Bake in a 9X13 tin for 1 hour at 175C. / 350F. Serves 6. Nut Cake hazelnuts 7 eggs 9 tbsp sugar lb ground almonds Separate eggs, beat whites until stiff. Add sugar, Gently add nuts and yolks Bake in 10 inch square tin 1 hour 325 F Carrot Cake 9 egg yolks 1 cups sugar 1 finely mashed carrots 1 tbsp sweet wine 2 - 3 cups ground almonds 9 egg whites, beaten until stiff little ground hazelnuts to stiffen Juice of orange or lemon Beat yolks and sugar until thick. Add carrots, juice, wine and nuts. Fold in whites. Bake 350 F for 50 minutes. Cake before Pesach 7 eggs separated 10 tsp sugar 100 grm ground almonds 100grm ground hazelnuts lemon squeezed Beat egg whites with sugar until stiff. Add other ingredients and mix by hand.

Cake
Almond Sponge Cake Serves: one 9 x 9 cake 7 eggs 1 cup sugar 200g ground almonds 1 T. lemon juice Beat eggs and sugar together on high speed for 8 minutes, until thick and light in colour. Add lemon juice. Gently fold in the ground almonds. Bake for 50 min on No 4 / 350 F /175 C Apple Charlotte 3 eggs separated yolks 2/3-cup sugar Pinch salt 2 cups grated apples cup ground hazelnuts/4 tbsp ground walnuts 2 tsp lemon 1tbsp wine or grape juice Beat egg yolks and sugar until thick. Add all ingredients besides egg whites. Beat egg whites until stiff. Fold into mixture. Sprinkle nuts on top. Bake at 175 C 35-40 minutes Coconut Pyramids/Tray Bake 4 oz coconut 2 oz sugar 1 egg few spoons ground almond Mix all ingredients together. Shape into pyramids or flat in tray. Bakeoven gas 5 for 20 minutes.If in tray, slice in sqares. Coconuts can be shelled and cut p, dried in low 90 C oven overnight and grated. Marzipan Ground almonds Sugar Water or liquid sugar

Biscuit
Coconut Macaroons 3 egg whites cup sugar 1 T. lemon juice 185g coconuts Beat the egg whites stiff. Add the sugar and lemon juice. Fold in the coconut. Drop by spoonfuls onto baking tray. Bake for 10 12 minutes on No 5 /375 F / 190 C until golden brown. Variation: Substitute ground almond or hazelnut for the coconut. Almond Biscuits 1 lb ground almonds 1 lb sugar 4 egg whites, beaten until stiff 4 tsp ground hazelnuts Mix well all ingredients. Spoon onto tray. Bake 400 F 10 15 minutes until light brown. Meringues Before Pesach 5 Egg whites 250 grm sugar Whip whites until very stiff. Slowly add sugar. Bake Gas 3 for 30 minutes. Nut Biscuits 3 eggs, separated cup liquid sugar 4 cups nuts Wisk egg whites until stiff. Add sugar and mix again. Add nuts and mix well. Drop teaspoons of batter onto a cookie sheet, spaced about apart. Bake for hour at 175C. / 350F. Serves 6. Nut Brittles 1 pound of sugar pound of hazelnuts, crushed not too small 1 level teaspoon of salt Add salt to nuts.

Ice Cream
Banana Ice Lollies - Ice Cream 3 bananas 3 eggs sugar citrus juice (lemon or lime or orange or combination) Mash the bananas. Mix in the eggs. Add sugar and juice to taste. Spoon into ice lolly containers and freeze. (Can also be made on Chol Hamoed with liquid sugar.) Banana Lollies Place banana onto lolly stick. Freeze Banana Ice Cream 3 bananas (mashed) 5 eggs, 1/2 cup sugar Fruit juice Beat eggs and sugar together for 8 10 minutes, until very thick. Fold in the bananas and juice. Freeze. Nut Ice Cream 6 eggs, separated 1 cup liquid sugar 1 cup nuts. Wisk egg whites until stiff. Add sugar and mix again. Add nuts and mix well. Pour into container and freeze. Serves 6. Banana Ice Cream 3 eggs, separated cup liquid sugar 1 banana, mashed cup orange juice, optional Wisk egg whites until stiff. Add sugar and mix again. Add banana and orange juice and mix well. Pour into container and freeze. Serves 10.

Sorbet
Tropical Sorbet 1 pineapple 1 mango 4 passion fruit Puree all fruit to a fine blend. Pour into container and freeze for 2 hours. Take out of freezer and mix very well. Do this every 2 hours until the whole thing is nearly frozen. The last time, mix it in the mixer for 2 minutes. Freeze. Mango Sorbet 2 mangoes Small amount of liquid sugar. Fruit Compote 8 apples 4 pears 2 quinces Liquid sugar Peel and dice all fruit. Cook with a little water over moderate flame until soft. Blend. Refrigerate. Freezes well. Apple Stew Use green Bramely apples. Peel, cut into quarters. Bring to the boil and turn off the flame immediately. Add sugar to taste. Baked Apples Apples Liquid sugar Lemon juice Nuts Optional liquidised banana or pineapple Peel and core apples. Spoon over liquid sugar. Add a little lemon juice. Add pineapple or banana and sprinkle with nuts. Bake until soft. Stewed Pears 6 pears Liquid sugar Pell, half and core pears. Cook covered in 1 cup of sugar and water. Cool. Serve in desert bowls with ice cream. Stewed Pineapples Fresh pineapple Liquid sugar. Slice pineapple. Cook for one hour with liquid sugar. Delicious! Melon / Kiwi Pops Slice melon and kiwi into bitesized chunks. Insert a toothpick into each piece of fruit and freeze. Eat frozen as a refreshing snack.

Put mangoes in food processor. Combine it with sugar and freeze it. When it is frozen beat it up again and freeze it back.

Fruit
Fruit Hors dOeuvre Grapefruit and or Oranges Tangerines Minneola Lemon Juice Liquid Sugar Peel and slice fruit into a bowl. Pour a little lemon juice or liquid sugar to suit taste and refrigerate. Serve with a slice of kiwi on top. Compote Bramley apples Pears Peel and slice/chop fruit. Put a tiny bit of water and leave overnight on low fire. Variation: Use eating apples

Applesauce Cooking apples Large amount of liquid sugar or water. With sugar to taste Cut cooking apples in small pieces. Boil them for about 20 minutes. Drain off the water. Let cool down. When completely cold and liquid sugar.

Condiment
Mayonnaise 8 egg yolks water salt sugar lemon juice

Neshei Chabad UK Pesach Cookbook www.lubavitchuk.com Put egg yolks into a saucepan. Add twice as much water as yolk. Heat on a very low light, stirring constantly, until thick. Add a tiny pinch of salt, sugar and lemon to taste. Soup Lokshen Fry an egg very, very, thinly on both sides. Empty it out onto a plate to cool off. When it is easy to touch, roll it up a bit like a swiss roll. When it is cold, cut it in thin slices and it looks very nice (but it is a lot of work). Soup Lokshen 2 Beat eggs, add to boiling soup and stir constantly for 2 minutes. Allow to reboil and serve. Avocado Mayonnaise Blend avocado well with lemon juice and a little salt until very smooth. Tomato Chutney Large beef tomatoes (peeled) Sugar Lemon juice Salt To peel the tomatoes, place in a container and pour boiling water over to cover. Let the sit for 2 minutes, then run them under the cold tap for about 30 seconds. The peel should come off easily. Put tomatoes in the food processor or blender and make a puree. Boil, uncovered, on a very low light, until all the liquid boils out. Add sugar, lemon and salt to taste. Refrigerate. Serve with fish or turkey. Chrain Raw beetroot Raw horseradish Blend until fine. Store in airtight container. Egg Sauce Whist lots of egg yolks for awhile. Add sugar and beat until thick. Season with salt and lemon juice. (Can add whole raw eggs and some whites at end to increase bulk if you need a lot. Dont whisk egg whites, they separate. Can be made with liquid sugar, but not as good.

Drinks
Orange Squash (or lemon squash or grapefruit squash) 18 oranges 1 lb sugar 5 lemons Squeeze juice of the fruit in a pot, strain it. Add sugar. Bring to boil. Let cool and strain. Store in jars. To use, mix with water to strength as desired. For grapefruit, replace oranges with grapefruit or else lemons can be used. Punch Mix amounts of squeezed juice. Vary by adding grape juice. Add liquid sugar to taste. Orange Juice Peel and pit 50 oranges 12 lemons Liquidize. Boil in sugar and cover with water, to taste, cook till clear strain through muslin. Can be frozen if required. Beetroot Drink Peel fresh beetroots. Cut into quarters. Boil it with a bit of salt. Take out beetroot. When it is lukewarm, add lemon juice, salt and a little sugar. When the liquid is warm, not hot, add egg and stir it very fast so it should not become like lokshen. Serve cold in tall glasses.

Dairy
Banana and Milk Breakfast 1 banana 1 cup ice cold milk Slice banana thinly into milk. Thats all. Variation:

Gebrocks
Gebrocks means mixing the matzo with liquid. During the first 7 days of Pesach we dont do this because there is a possibilty that some of the matzo may not have been baked thoroughly and if some water gets on it then it may become Chometz. However, on Acharon She Pesach, the last day of Pesach, we have a Minhag that we can eat gebrocks, although we havent eaten it the whole Pesach.

It is a bit like Weetabix. 4 tsp matzo meal 1 tspof liquid sugar A bit of hot water Milk First pour the sugar on top of the matzo meal. Then add the hot water until you get thhe right texture (like thick pudding). Then add the milk. Matzo Kugel Pieces of matzo Egg Salt Crack the matzo into bitesized pieces. Leave to soak in the egg for about hour. Then fry it for a while on each side. Slice it to serve. Kneidlach 1 cup of Matzo Meal 2 eggs Pinch of salt Beat eggs well with fork and mix with matzo meal and salt. Refridgerate for 1 hour. Shape into balls and drop into boiling soup.
