Processing, Product Development and Marketing of Organic Native Chicken Products (2) Executive Summary Significance Currently, the clamour of meat consumers internationally (Linden, J., 2007) an d locally also show that a preference is geared towards organically produced pro ducts. The absence or minimal infusion of chemicals in the native chickens feeds me an that they are more organic than its commercial counterparts(Baguio (2007). Co ncerns over feed safety and health issues resulted in a shift for meat products with good flavour, from chickens raised in a more human environment, with minima l antibiotics or chemical based feed additives and native chickens meat are more savoury and tastier (PCARRD, 2003). A bright prospect that needs to be given an extra attention. Philippine standard for organic agriculture specifies that the following p roducts: ( synthetic growth promoters or stimulants, appetizers, preservatives, urea, abattoir feeds, droppings, dung or manure, by products of food industry (m olasses), feed subjected to solvent extraction (soybean meal) pure amino acids , genetically engineered organisms or products and only allowable additives, con centrated vitamins and trace elements supplements, shall not be included in or a dded to the feed of farm animals. Poultry houses for laying hens must have a suf ficiently large part of the floor area, provided with perches. Poultry must have an access to open air whenever the weather condition permits for at one third o f their life. These open-air runs must contain vegetation, be provided with prot ective facilities and permit animals to have sufficient numbers of drinking and feeding stations. (PNS/BAFP, 2003) Bicol Native chicken production system can still be considered generally as backyard and is less productive. Several authors studies showed that, native chickens have slower growth rates, lower laying rates, and higher mortality rat es than their broiler counterpart because of primitive production systems and ma nagement practices (e.g. Devendra, 1993; FAO, 2000; Alders and Spradbrow, 2001) as cited by Chang(2006). But Western Visayas and Central Visayas are more advanc e in this aspect as they are the highest producer of native chickens in the coun try (BAS, 2005). Their existing feeding and management practices can be tried in Bicol native chicken production to know if it can be adapted in the Bicol Regio n. In addition, Chang analysis showed that quality and supply of outputs of the backyard sector are inconsistent due to heterogeneity in genotype and production system. Access to market is another important issue facing the backyard sector. In the Bicol Region the native chicken production is no exception. Rural househ olds in the Bicol Region, like their counterparts in other developing countries, often keep a small number of chickens in their backyards as a means to suppleme nt their household incomes and nutritional needs. Backyard poultry utilizes very little resources. They are often raised under primitive conditions, without any housing, and survive on scavenging on naturally occurring feeds, fallen grains, and household refuse. There is also no systematic breeding or management. True native chicken bloodlines may no longer be available due to the infusion of impo rted breeds. There is a need to procure available native hens and rooster as a s tart and further development studies could be done. The improvement of its production must be tailored to have an adaptable t echnology, adaptable for farmers with small area for native chicken production.

An industry must be developed looking into better management at different stages of production. An approach is required so that certain community can be selecte d in what stage of production they may involved so that source of native eggs, d ay old chicks, hardened chicks and slaughter chicken will always be available. M anagement which includes feeding organic ration with available farm wastes to na me pili pulp and testa in the ration must be perfected to supply the needs of ea ch production stage. The potential of the proponent findings on the effect of B icol herbs specifically lagundi and oregano decoction and makabuhai extract on h ealth management in controlling common respiratory infection and parasites infes tation , respectively, of native chicken raised in confined and semi-confined m anagement, needs to be verified under open range and semi-confined larger area. Various farm wastes are available in the Bicol region such as pili pulp a nd testa that needs to be tried in organic native chicken production. Previous i nitial studies on these wastes had been conducted by several researchers and the proponents feeding trials on broiler and swine showed potential utilization and this has to be tried also on native chicken. Hence, this program was conceptual ized with the following objectives: OBJECTIVES General: To establish organic native chicken industry in the Bicol Region. Specific: 1.0 To evaluate the adaptability of any existing appropriate practical f eeding and management practices of raising organic native chicken. 1.1 To determine the existing native chicken industry in Bicol; 1.2 To evaluate the laying and growth performance of native chickens fed wit h various farm wastes (Pili pulp and testa; and 1.3 To verify the effect of common Bicol herbs in controlling external paras ites and respiratory infection raised under open-range and semi-confined managem ent systems . 2.0 To develop native chicken meat and eggs processed products and develop m arketing strategies of organic native chicken products such as organic native ch icken meat as food enhancer, processed meat and egg products, hatching eggs, day old chicks, hardened chicks, breeder and slaughter native chickens. 2.1 To compare the carcass quality of native chicken raised under open range and semi-confined fed with various farm wastes and herbs; 2.2 To compare the processed native chicken meat as food enhancer and proces sed meat products organically grown; and 2.3 To conduct market research for organic native chicken products and organ ic native chicken-based food products. METHODOLOGY Project 1. Study1. The initial activity of the project is to assess the existi ng native chicken breeders, production management and marketing systems or the p resent situation of native chicken industry in the region. Study 2. The study will focus on the utilization of pili pulp and te sta as feed ingredients. Experimental Feeding trial will be conducted both on la ying and growing native chicken. This will determine laying and growing performa nce parameters and its profitability. Study 3. The study will conduct feeding trial utilizing the available Bicol herbs for health management, to verify the result of previous studies con ducted. This will monitor incidence of diseases and parasites both in the open r ange and semi-confined management systems. Project 2 Study 1. The study will determine the carcass recovery and quality at different ages of slaughter of native chicken produced from project 1 in terms o f dressing and lean meat recovery, chemical analysis ( proximate, fatty acids, a

nd betaine etc.,). Age of slaughter at 16 to 18 weeks, 1 year and culling age of breeders at 2 years or more. Study 2. The study will conduct product development using the intact me at products, ground meat for pizza toppings, hamburger, as flavouring material a nd shelf life study of the product developed using 2 or more packaging material in storage in the freezer. Study 3. The study will conduct test on the organic native chicken produ cts and native chicken based products to include product developed as against ex isting native chicken products, brand name developed to be tested among housewif e and consumer benefits. A test market in households and hospitals will be under taken. Development of promotional methods such a brochure, flyer, demonstration, sampler, advertising will be undertaken.
