Procurement of milk Procurement of Raw Milk Milk is procured to the dairy from milk producers especially from the formers form 300 villages with their respective milk collection Agencies. The average milk consumption is nearly 38,000 litres per day through out the year and the sales will be 38,000 liters per day. The sales revenues per day is 9.5 Lakhs and the monthly turnover will be 2.85Lak rupees. In the procurement of milk, there occurs two seasons. They are:

1. 2.

Season and Un-season (Lean Season)

The season starts from October to February. In this period, the procurement of milk increases to 30,000 litres per day and the sales will be decreased to 5,000 litres to 8,000 litres per day. This season is called as FLUSH SEASON. Where as in un-season i.e., from March to September, the procurement will be as usual that is 20,000 liters per day and the sales will be increased 10,000 liters per day. Milk is collected from farmers and milk producers from around 230 centres in three districts, the collected milk is sent to chilling stations near by.there are 8 chilling stations operating, the milk is chilled to 4 degree c at chilling stations in order to preserve the milk . after the process of chilling the milk is stored in tanks and transported to the milk processing plant. Transportation to chilling stations is carried out by contract vehicles operating in specific routes, at a rate of 8 rs per km.from chilling station the milk is transported to processing plant through dedicated vehicles operated by the plant. Priya milk and milk products ltd, helps the farmers by providing loans for the purchase of cattle and provides feed for the cattle at subsidized rates.it provides the best price for the milk when compared to its competitors. The price for milk procured is calculated on the basis of standard calculations, during the collection of milk the fat content of the milk is calculated and the rate is decided on the basis of fat content. The rate is as follows 1k fat = rs.4.30 5k = rs 4.30 *5 =21.50 Fat content is calculated using babcock test, and the amount is paid accordingly. 40000 litres of milk is collected daily from various sources daily. The types of milk is basically of buffalo milk and cow milk, the fat content is more in buffalo milk when compared to cow milk. Milk processing Raw chilled milk is collected at the processing centres from the tanks, this milk is moved to the pasteurizers for pasteurization. Pasteurization: Pasteurization is a process of heating a food, usually liquid, to a specific temperature for a definite length of time, and then cooling it immediately. This process slows microbial growth in food. Unlike sterilization, pasteurization is not intended to kill all micro-organisms in the food. Instead pasteurization aims to reduce the number of viable pathogens so they are unlikely to cause disease (assuming the pasteurized product is stored as indicated and consumed before its expiration date). Commercial-scale sterilization of food is not common because it adversely affects the taste and quality of the product. Certain food products, like dairy products, are superheated to ensure pathogenic microbes are destroyed In this process the milk is heated to 72 degree temperaturefor 16 seconds and the is cooled. The capacity of the pasteurizers used in the plant is of 5000litres per hour, this process helps in reducing the misrobacterial particles.

After the pasteurization the milk is then shifted to homonizers for homonization Homonization

Homogenization is intensive blending of mutually related substances or groups of mutually related substances to form a constant of different insoluble phases (sometimes with addition of surfactants) to obtain a suspension or emulsion One of the oldest applications of homogenization is in milk processing, the mixing of several different milking herds and/or dairies to produce a more consistent raw milk prior to processing and to prevent or delay natural separation of cream from the rest of the emulsion. The fat in milk normally separates from the water and collects at the top. Homogenization breaks the fat into smaller sizes so it no longer separates, allowing the sale of nonseparating milk at any fat specification. Milk homogenization is accomplished by mixing massive amounts of harvested milk to create a constant, then forcing the milk at high pressure through small holes. Yet another method of homogenization

uses extruders, hammermills, or colloid mills tomill (grind) solids. Milk homogenization is an essential tool of the milk food industry to prevent creating various levels of flavor and fat concentration. Another application of homogenization is in soft drinks like cola products. The reactant mixture is rendered to intense homogenization, to as much as 35,000 psi, so that various constituents do not separate out during storage or distribution
