Meal 1

Crock Pot

! lbs baby back ribs

Cook ribs in crock pot for 6 hrs on low. For last hour of cooking time, drain all broth. Pour b’que sauce over ribs and cook for remaining hour. Flavor beans with brown sugar, mustard, ketchup. Heat thoroughly in microwave. Toss slaw with Italian drsng. Serve w/ hot corn.

 

1 bottle barbeque sauce

1 can pork n’ beans

 

(Brown sugar, mustard, ketchup)

boneless chicken breasts

Sprinkle chili powder, salt, & pepper over both sides of chicken breast pieces. Sauté chicken in oil on med heat, 5 min, turning once, until no longer pink on exterior. Stir in beans, corn and salsa. Heat to boiling; reduce heat. Cover and simmer 5 minutes or until vegetables are hot. Serve with steamed yellow rice and zucchini sautéed in butter.

(Chili powder, salt & pepper, oil)

1/3 c thick-n-chunky salsa

5 oz pkg yellow rice 1 zucchini, cubed (Butter)

Quick Meal

lb ground beef, cooked

Combine cooked meat with 5 remaining ingredients and heat. Serve on sandwich buns. Serve with chips and grapes.

! c diced onion

 

Chop ham into smaller, shredded pieces. Sauté ham and onion together until onion is browned. Divide ham/onion and cheese evenly over each tortilla Fold each and grill both sides in skillet until browned. Combine Cole slaw, chopped apple, and peanuts with cole slaw dressing.

Cook beef, onion, salt & pepper until done; drain. Stir in sour cream and corn. Evenly divide & spoon beef mixture onto tortillas; top with a few drops of enchilada sauce. Roll tortillas and place seam side down in square baking dish. Pour remaining sauces over enchiladas. Sprinkle with cheese. Bake uncovered @350 until cheese is bubbly. Serve with chips. Slice cucumber and eat w/ Ranch dip.
