Candidates must put their full signature in all the places asked for at all the stages of admission process. Introduction: The production of food-stuffs from spoilage by moulds and bacteria is a major concern of the food technologist. One of the most obvious and ancient methods of accompanying this is to dry the food to such an extent that mould and bacteria growth cannot occur. The accompanying reduction in weight and volume makes food preserved in this way especially attractive for military purpose, and much of the development of modern dehydrated food has been the result of stimuls provided by 2nd World War. The term dehydration is applied to induced drying as distinct from drying in the sun or wind. Mostly all the food products are dried artificially for preservation. Potato and Onion are dehydrated for their preservation. These are used throughout the year and can be stored easily. Only care has to be taken to prevent moisture affecting them. Properties & Characteristics: Potatoes are an important source of Vitamins-C, Vitamin B and appreciable amount of minerals viz. Iron. The 100 gms. of potatoes provide 97 calories and contain Vitamin C-17, mg, Carotene-24 mg, Iron - 07. mg. Protein -1.6 mg, Carbohyderates - 22.6 gm, Thiamine - 0.10 gm and Niacin - 12 mg. Composition of the onion is as following. Water - 85.25%, Protein - 2.28%, Fat - 0.22%, Nifext 10.8%. Fiber - 0.76%, Ash - 0.68%. Uses & Applications: Dehydrated onions are used chiefly as a constituent in various food products as raw material. However, there is a demand for dehydrated onions in catering concerns, institutions and industrial canteens. Besides, they find extensive domestic uses. Potato Powder loused in vegetables, cereals, pulses, meat and poultry. Potatoes are used throughout the year and can be stored easily. - Market Survey: There are some units engaged in the manufacture of dehydrated onion and potato powder. These are well oriented in export market. In huge quantity they are exported to various countries, i.e., U.S.A., U.K., Germany, Zambia, Netherlands, Hungary and other countries. Hence it has very good scope to rise. Raw Materials: Onion, Potato and Caustic Alkali. Polythene laminated tin boxes. Plant & Machinery: 1. Peeling and Cutting Machine 2. Washing tank 3. Manufacturing Process: Manufacturing process for both Potato and Onion powders are quite similar, only starting is different. However, equipments used in both plants are quite similar. Here manufacturing processes for both of these are given below separately. Onion Powder: Onions are peeled and fed to the washing tank for removing all the adhering dust and then sliced into small pieces. These slices are introduced in a tunnel drier for drying. The tunnel drier has a tunnel Of 12-15 m. long length, 2 m. wide and 2 m. high. Onion slices are introduced into it manually. Tunnel is divided into several compartments each holding two or more stacks of trays. Air having a velocity of 200 to 400 meter/minute is carried from a heatir through a main duct. After tunnel drying they be put into Bin, type finishing dryer. It is widely used prior to packing of dried powdered food product and also controlling moisture content. Basically these are cylindrical containers through which hot air is blown at a velocity of 100 ft2/min. These bins provide a low cost method of removing moisture. Then these dehydrated onions are fed to the grinding mill pulverizer for powder making. The fine powder of onion in packed in laminated tin boxes. Potato Powder: Raw potatoes are introduced in the bleaching unit to remove all the adhering dust. Potatoes are then washed in Water by adding 5-11% alkali. Subsequently they are washed with pure clean water. They are then poured in a steam jacketed vessel for boiling. Potatoes are heated, upto 100C to fine boiling. These boiled potatoes are then subjected to the slicing machine and cut into slices. These slices are fed to the tunnel drier for removing all the moisture below 5% by supplying hot air into the tunnel. These dryed slices are then pulverized to a fine powder by means of a pulverizer. This fine potato powder is packed into the laminated tin boxes and sent for marketing.

Introduction: The production of food-stuffs from spoilage by moulds and bacteria is a major concern of the food technologist. One of the most obvious and ancient methods of accompanying this is to dry the food to such an extent that mould and bacteria growth cannot occur. The accompanying reduction in weight and volume makes food preserved in this way especially attractive for military purpose, and much of the development of modern dehydrated food has been the result of stimuls provided by 2nd World War. The term dehydration is applied to induced drying as distinct from drying in the sun or wind. Mostly all the food products are dried artificially for preservation. Potato and Onion are dehydrated for their preservation. These are used throughout the year and can be stored easily. Only care has to be taken to prevent moisture affecting them. Properties & Characteristics: Potatoes are an important source of Vitamins-C, Vitamin B and appreciable amount of minerals viz. Iron. The 100 gms. of potatoes provide 97 calories and contain Vitamin C-17, mg, Carotene-24 mg, Iron - 07. mg. Protein -1.6 mg, Carbohyderates - 22.6 gm, Thiamine - 0.10 gm and Niacin - 12 mg. Composition of the onion is as following. Water - 85.25%, Protein - 2.28%, Fat - 0.22%, Nifext 10.8%. Fiber - 0.76%, Ash - 0.68%. Uses & Applications: Dehydrated onions are used chiefly as a constituent in various food products as raw material. However, there is a demand for dehydrated onions in catering concerns, institutions and industrial canteens. Besides, they find extensive domestic uses. Potato Powder loused in vegetables, cereals, pulses, meat and poultry. Potatoes are used throughout the year and can be stored easily. - Market Survey: There are some units engaged in the manufacture of dehydrated onion and potato powder. These are well oriented in export market. In huge quantity they are exported to various countries, i.e., U.S.A., U.K., Germany, Zambia, Netherlands, Hungary and other countries. Hence it has very good scope to rise. Raw Materials: Onion, Potato and Caustic Alkali. Polythene laminated tin boxes. Plant & Machinery: 1. Peeling and Cutting Machine 2. Washing tank 3. Manufacturing Process: Manufacturing process for both Potato and Onion powders are quite similar, only starting is different. However, equipments used in both plants are quite similar. Here manufacturing processes for both of these are given below separately. Onion Powder: Onions are peeled and fed to the washing tank for removing all the adhering dust and then sliced into small pieces. These slices are introduced in a tunnel drier for drying. The tunnel drier has a tunnel Of 12-15 m. long length, 2 m. wide and 2 m. high. Onion slices are introduced into it manually. Tunnel is divided into several compartments each holding two or more stacks of trays. Air having a velocity of 200 to 400 meter/minute is carried from a heatir through a main duct. After tunnel drying they be put into Bin, type finishing dryer. It is widely used prior to packing of dried powdered food product and also controlling moisture content. Basically these are cylindrical containers through which hot air is blown at a velocity of 100 ft2/min. These bins provide a low cost method of removing moisture. Then these dehydrated onions are fed to the grinding mill pulverizer for powder making. The fine powder of onion in packed in laminated tin boxes. Potato Powder: Raw potatoes are introduced in the bleaching unit to remove all the adhering dust. Potatoes are then washed in Water by adding 5-11% alkali. Subsequently they are washed with pure clean water. They are then poured in a steam jacketed vessel for boiling. Potatoes are heated, upto 100C to fine boiling. These boiled potatoes are then subjected to the slicing machine and cut into slices. These slices are fed to the tunnel drier for removing all the moisture below 5% by supplying hot air into the tunnel. These dryed slices are then pulverized to a fine powder by means of a pulverizer. This fine potato powder is packed into the laminated tin boxes and sent for marketing.

Those eligible candidates who do not get call-letters or who have been issued call-letters with wrong name, community, category No., photograph and not issued with free travel authority for SC/ST candidates may come personally to Railway Recruitment Board,D-79/80, Rail Vihar, Chandrasekharpur, Bhubaneswar-751023, at 09.30 hrs on 18.04.2012 (Wednesday) for getting corrected/duplicate callletters. Candidates should bring along with them adequate proof of having submitted application i.e. copy of DD/IPO and two passport size photographs, age proof certificate, caste certificate (if SC/ ST/OBC), ESM'-discharge certificate, PH certificate, qualification certificate etc. Candidate whose application has been rejected, if feels that his/her application has been rejected for wrong reason(s), he/she may also come to the office of Railway Recruitment Board, Bhubaneswar on 18.04.2012 (Wednesday) at 09.30 hrs to scrutinize his/her application.
