Making Wine and Art Accessible

N
ew World and Old World wine classi-
fications have always been a little bit at
odds with one another. In France, for
example, one doesn’t buy a bottle of Pinot
Noir, one buys a bottle of Burgundy. Euro-
pean winemakers have always put an
emphasis on terroir, soil and land, not on
grape variety. New World winemakers have
made the grape varietal king and so buying
wines from either Old or New World
purveyors has become more of an education
than an exercise in choice.
Enter Bion Rice, whose family wine-
making foundations include Sunstone
Winery in Santa Ynez, and who decided that
while he learned winemaking in the New
World, it was the Old World idea of blending
and cuvee winemaking that intrigued him.
“The longer I spent in the winery learning the
craft and science of winemaking, the more
interested I became in the art of blending
wine. I found that blending really appealed to
my senses and was more creative.” Turning

art of blending wines, Rice began Artiste
Winery and Studio in downtown Santa Ynez.
Artiste is not just another winery, though –
as is evinced by Rice’s dedication to cuvee
blending rather than a focus on varietals.
“Artiste allows me to focus solely on quality,
without being ultimately concerned with
designating single-vineyards and political
appellations, or staying vintage and varietal
on the label,” he says. Still, that wasn’t the
entire basis for his focus.
Working together with artists, Rice devel-
oped, not only a unique winemaking facility,
but an artist’s studio as well. Rice built a
winery dedicated to using the highest quality
grapes to produce truly singular wines from
vineyards all over the state. He is, in essence,
using California as his pallet to create exotic
tastes for your palate. It’s a synergy borne of
the artistry of winemaking and thus, Artiste’s
name.
The winery’s showcase of local and world-
renowned artists at the facility showing their
work is the lynchpin in this unique wine

studio. This month, Artiste will host the
paintings of Craig Nelson an artist known for
his rich, lush oil paintings, Nelson is a
favorite of many collectors including James
Garner, Neil Simon, The Toyota Corporation
and many others. His work will be displayed
at Artiste for all to see.

work at Artiste. In the Santa Ynez tasting
studio, prepare to explore your own artistic

The studio itself is a sort of monument to the 1870s impressionist

art movement in France. The studio is designed to look like the Hotely
Baudy in Giverny, France where the impressionist movement is
thought to have begun. Its location in Santa Ynez, itself a unique fron-
tier town that still retains a kind of old world charm, allows Artiste to
stand out from other tasting rooms by drawing attention not to vine-
yards, but to a town setting and a creative and artistic setting.
Each release from Artiste includes a release from one of its many
artists on the label and is accompanied by a food pairing and art show
featuring those very paintings and a discussion with the artist as well
as autographed bottles. The synergy of art and wine comes full circle
when the inspiration within the bottle becomes the same inspiration
outside the bottle, on its label.
Rice’s unique blends, themselves an homage to Old World wine
blending traditions have given birth to beautifully crafted wines such
as Toretta. With a base of the Italian varietal, Nebbiolo, Rice blends in
Merlot, Cabernet Franc and a small bit of Barbera. The Bordeaux
combine with the Cal-Itals and the result is now an Artiste library
wine.
Artiste goes where few other wineries have chosen to go, directly
into the art of winemaking. But rather than make that art inaccessible
and out of touch, Bion Rice, and the rest of the Artiste crew, have
brought the artists and the winemakers right out in front for all to see.
Customers can even sit in on Rice’s blending sessions and talk about
the choices he makes while he makes them. In short, Artiste brings its
art – and its wine – to the people.

J. Paul Rosilez – Where ‘Almost’ Isn’t Good Enough

ttention to detail comes with the territory
of a pharmacist. Filling a prescription
“almost” correctly just doesn’t cut it.
Joe Rosilez brings that same precision and
lofty standards to his winemaking for J. Paul
Rosilez Winery in Paso Robles.
“Almost” just isn’t good enough.
“I’m probably the pickiest guy making
wine,” J. Paul said during a brief break from
his job as pharmacist. Besides the chemistry
background a pharmacist brings to the art of
making wine, Rosilez said that being a stickler
for details helps him as a winemaker.
“Everything has to be done just right,” he
said. “I’m making sure that when the wine gets
into the bottle, it’s exactly what it needs to be.”
J. Paul produces an array of wines using
fruit sourced primarily from Herder Vineyards
near Creston. The vineyards, southeast of the
J. Paul Rosilez winery and tasting room,
provides the winemaker with Chardonnay,
Viognier, Syrah, Zinfandel, Petite Syrah,
Merlot and Cabernet Sauvignon.
The winery’s 2001 Pinot Noir from the
Gold Coast Farms vineyard in the Santa Maria
Valley earned a gold medal at the Orange
County Fair.
Besides the 100-percent varietal releases,
J. Paul also produces a red blend combining
Sangiovese and Cabernet Sauvignon that is
and Sauvignon Blanc called “Katash” – a
blending of the names of his two daughters,
Katelyn, 3, and Ashley, 5.
“That is their college fund,” J. Paul said of
the sales of “Katash.”
J. Paul and his wife, Whitney, are expecting
their third child, which promises to make
their lives even busier – if that’s possible.
“It’s crazy,” summed up J. Paul.
Just how tight is J. Paul’s schedule?
Well, the interview for this article occurred
in a tiny waiting room just outside the phar-
macy where he works. He admits he doesn’t
need much sleep – maybe four hours a night.
That’s fortunate, since J. Paul said he
performs most of his winemaking between 10
p.m. and 2 a.m. Seems like Midnight Cellars
might have been an appropriate name.
So, how did the pharmacist become a
winemaker? In a sense, J. Paul married into the
business. Not that his wife came from a family
of winemakers. But it was Whitney who intro-
duced J. Paul to wine appreciation. Before they
married, the couple spent a lot of time touring
Napa Valley wineries and, ultimately, held
their wedding at Chimney Rock Winery.
As a wedding present, Whitney presented
her new husband with a de-stemmer and wine
press. The family’s veterinarian gave the couple
five tons of grapes and J. Paul embarked on a
winemaking career.
The venture began in Lodi, where J. Paul’s
family raised livestock. In the first year, J. Paul
produced five barrels. He received help from
Adam LaZarre of Monterey County’s Hahn
Estates Winery.
When the family decided to move south,
they initially looked in Santa Ynez. But then
they found a 40-acre parcel east of Paso Robles
and built a 5,000-square-foot winery and a
tasting room on the property. J. Paul said they
pressed their first wine there this year.
“We’re a family winery,” said J. Paul, noting
that his mother typically staffs the tasting room
while he works at the pharmacy and his wife,
who was a pharmacist herself until two years
ago, raises the children.
J. Paul Rosilez produces about 3,000 cases
annually, said J. Paul, with most of the sales
coming through the tasting room and wine
club. The winery did land a contract to supply
Santa Barbara’s exclusive Bacara Resort with its
Chardonnay.
J. Paul said his winemaking style is one that
emphasizes producing approachable, food-
friendly wines that aren’t overly extracted. He
makes textured wines with softened edges.
Reds are aged between 18 and 24 months,
then kept in the bottle for a year before they’re
released.
“Quality is always the biggest issue,” he
said. “If a wine isn’t up to standards, we won’t
force it into the bottle.”
The payoff for the long hours, said J. Paul,
is that people enjoy his efforts.
“The best thing I get is when people come
into the pharmacy and compliment my wine,”
he said. “It doesn’t take a lot. If they’re enjoying
what you’re doing, then you do, too.”
The J. Paul Rosilez Winery tasting room is
located at 4889 Dry Creek Road at the inter-
section of Highway 46 East and Jardine Road.
The adobe-style building is on the left. Up to
eight wines are generally poured each day,
including two library wines. The tasting room
is open Thursday through Monday from 11

The San Luis Obispo Vintners Association

Labor at their 17th Annual Harvest Celebra-

ARROYO ROBLES
A True ‘Family-Run’ Winery

A rroyo Robles is certainly a family-run enterprise.
Bob and Tanis Shore, along with their children,
Brianna and Jason, started making wine in 1998,
sharing equipment with three other wineries in a
converted apple barn in See Canyon near Avila
Beach.
Bob is the winemaker, with help from assistant
winemaker Mauricio Marchant, while Brianna
handles the tasting room and marketing, and Jason
oversees the wine club and technical support.
Bob Shore spent 30 years as a petroleum engi-
neer after graduating from Stanford University, then
decided he wanted to be a farmer. The family
initially grew stone fruit, table grapes and cotton
and wheat in the San Joaquin Valley, said Brianna.
Ultimately, the family decided to get into the wine
making business.
Their wine press has moved three times, but
they’ve settled successfully in Paso Robles, where
they are planning to open a winery sometime in
2008 on the 60-acre vineyard the Shores own off of
San Marcos Road. Twenty-four acres of the vineyard
are planted, much of it to Syrah, which is the heart
of the Arroyo Robles’ Rhône-oriented program.
Not that the winery is a one-note operation.
Arroyo Robles produces an impressive array of vari-
etals, including Chardonnay, Viognier, Cabernet
Sauvignon, Zinfandel, Grenache, Petite Sirah and

Tempranillo. Additionally, they produce a
Mourvedre Rose! and a Syrah Rose!, along with a
pair of sparkling wines and a trio of varietal Ports.
The Arroyo Robles 2005 Chardonnay, using fruit
from Monterey County, captured a gold medal at
the 2006 Mid-State Fair.
Set to be released this fall is a 2005 Tempranillo
and a 2005 blend bottled under the label “Little
Star,” featuring Tempranillo, Syrah, Petite Sirah and
a splash of Merlot.
With the opening of their handsome downtown
tasting room in March 2006 across from Paso
Robles’ historic City Park, said Brianna Shore, the
winery is becoming a well-known piece of the
region’s booming reputation.
“With this location,” she said, “things have just
skyrocketed.”
Arroyo Robles currently produces about 3,500
cases annually, said Shore, but plans are to increase
that number to 5,000.
Shore also said distribution soon will become
more widespread. Up to now, however, demand
through Arroyo Robles’ wine club and at the tasting
room is often threatening to overwhelm supply.
The Arroyo Robles tasting room is at 739 12th
St., at the corner of 12th and Park streets in the

WEST and Crafts Evening
The Highway 46 West Wineries Group is gearing up for the Holiday
Friday Night Wine, Cheese and Crafts Evening. The group of 13
wineries will gather at Eagle Castle Winery Friday from 6pm to 8pm.
The admission for the event is $15 per person or $25 a couple, tickets
sold at the door. All 13 wineries will taste out award winning wines.
Cheese will be paired with each winery and Holiday baked goods will
be available for tasting. Local Crafts will be related to wine and the
holidays will be displayed and available to purchase. The Grapeline
will be taking reservations for transportation to and from the event.

The Paso Robles Wine Country Alliance represents wineries, growers
and businesses in Paso Robles Wine Country, California’s fastest growing
