Instructions : 1. Soak beans overnight in water, drain. Cover with fresh water and bring to a boil. Reduce heat and simmer until beans are tender, 1 to 2 hours. Salt toughens skins so add salt after beans are tender. 2. Place onions, red pepper, carrot and oil in a large skillet. Cook, stirring, over medium low heat until vegetables are golden, about 10 minutes. Add garlic and cook, stirring, 2 minutes. Stir in cumin, tomatoes with juice, black beans and water. Bring to a boil. Reduce heat and simmer, covered, over low heat, 20 minutes. Cool uncovered, until thickened, about 10 minutes longer. Stir in jalapeno pepper. Season to taste with salt. 3. To prepare rice, combine tumeric and cumin in medium skillet. Heat over low heat, just until fragrant, about 30 seconds. Add water, rice and salt. Bring to a boil. Reduce heat. Cover and cook until water is absorbed and rice is tender, about 15 minutes. 4. To finish recipe, spoon rice into shallow bowl. Top with beans. Garnish with cilantro. Serve yogurt on the side.

Instructions : Put 2 teaspoons peanut oil and 2 teaspoons sesame oil in large heated skillet. When oil is hot, add chopped onions, sliced scallions and bell peppers. Saute until crisp-tender, about 4 minutes. Toss in mushrooms and cook 2-3 minutes. Add carrots, celery and cilantro and stir. Season with salt and pepper. Remove skillet from heat and allow mixture to cool. Position 1 wrapper with pointed end toward counter edge. Arrange filling mixture in line 2 inches from the bottom corner. Wrap corner over mixture and pull back to tighten. Fold over two sides and roll to end of wrapper. Repeat with rest of wrappers. Put 1/4 cup peanut oil and 1 teaspoon sesame oil in heated skillet. When oil is hot, add spring rolls in batches, turning until both sides are golden brown and crisp, about 1/12 minutes per side. Add oil between batches as needed. Drain on paper towels. Serve immediately.

Fake meat sauce: Heat oil and cook onions until browned. Add fake beef, garlic, salt and pepper and stir. Add tomato sauce and water. Bring to a boil, lower heat and simmer x 20 minutes or until it becomes thick. 7. Serve: spoon yogurt sauce onto a plate, add wedge of pumpkin and place meat sauce on top.
