ALDI MEAL PLAN

MEAL #: Side dishes are in ITALICS Meal 1

INSTRUCTIONS: Side dish instructions are in ITALICS While pasta is cooking, saut onion in 1 T of artichoke oil in large skillet. Cut artichokes into fourths and discard remaining oil. In a skillet add half-and-half, cheese, artichoke hearts, and chicken. Stir until hot. Drain pasta, return to pot and pour mixture over pasta. Toss. Serve w/ croissants and butter. Mix ground beef, milk, breadcrumbs, salt, & pepper. Shape into balls. Put meatballs in square baking dish. Combine sauce ingredients and pour over meatballs. Cover / bake @ 350, 1 hour. Prepare potatoes as pkg directs. Steam cauliflower and serve w/ butter and garlic salt.
*Bake remaining meatballs in separate dish at same time. Reserve / freeze for meal #7.

Chicken Peanut Stir Fry English Muffins

INGREDIENTS: Side dish ingredients are in ITALICS 8 oz rotini 6 oz jar marinated artichoke hearts cup finely chopped onion 1 cup half-and-half 5 oz shredded parmesan cheese 1 lb cooked and chopped chicken 1 pkg croissants (Butter) 2 - 3 lbs lean ground beef/chuck * (1 c milk, 2 c Italian breadcrumbs, 2 t salt, 2 t pepper) Sauce: c chopped onion, c green pepper, ( c vinegar, c water, 3 T sugar, 1 t Worcestershire, c ketchup) 1 box garlic flavored mashed potato mix 1 head cauliflower (Butter, garlic salt) 1 pkg kielbasa, chop into small pieces 1 c chopped celery c chopped onion (1 T bottled minced garlic) 2 14 oz cans beef broth ( t red pepper flakes, c uncooked long-grain rice) 14 oz can black beans, rinsed 1.5 lbs yellow squash, sliced thin c chopped onions 2 ripe tomatoes, sliced 1 box cornbread mix (Milk, egg, butter) (1 c mayo, 2 T cider vinegar, t salt, dash pepper) 6 oz rotini, cooked & drained 2 - 5 oz cans white tuna, drained & flaked 1 c sliced celery c chopped onion 1 c green peas, thawed 1 pineapple, peeled and chunked 1 box crackers 8 oz tub garden vegetable cream cheese 1 lb sandwich ham, sliced thin 1 pkg flour tortillas 1 bag chips Celery sticks (Ranch dressing) (2 T soy sauce, 1 T corn starch, t salt, t ginger, t garlic powder, t oil) 1 c chicken broth 1 lb boneless chicken breasts, slice in strips 2 c small broccoli florets c chopped salted peanuts (Steamed white rice, butter) 1 pkg English muffins Cooked meatballs from Meal # 2 26 oz jar pasta sauce 8 oz spaghetti noodles, cooked (Parmesan cheese) Caesar salad kit (Staples are in parenthesis)

In large skillet, brown chopped kielbasa in small amount of oil. Add celery, onion, and garlic. Cook 5 min. Add broth and red pepper. Bring to a boil. Add rice. Cover; simmer 20 min. Add black beans. Cover and cook 10 more min or until liquid is absorbed. Microwave squash w/ c water in covered dish for 4 min. Drain squash then skillet saut w/ onion in 2 T butter until lightly browned. Serve sliced tomatoes on side. Prepare cornbread muffins as pkg directs. Combine first 4 ingredients for dressing. Toss w/ remaining salad ingredients to coat. Serve immediately or chill if desired. Serve with pineapple and crackers.

Spread thin even layer of cream cheese on each tortilla. Lay ham slices on top of cream cheese then roll and place seam side down. Slice in half or into 1 slices. Great for brown bag lunches! Serve w/ chips and celery w/ ranch dressing. Combine 1 cup of broth, soy sauce, corn starch, salt, ginger, & garlic powder. In no-stick skillet, stir fry chicken in heated oil, 2 min. Remove. Add c broth to skillet; bring to boil. Add broccoli. Reduce heat; cover & simmer 2 min until crisp-tender. Increase to high. Add chicken & sauce; stir to thicken. Stir in peanuts. Serve over steamed rice. Serve w/ toasted muffins. Combine spaghetti sauce and meatballs in a covered baking dish. Bake @350 for 30 min. Serve over cooked noodles. Sprinkle with parmesan.
