Amiri Khaman ( Microwave Recipe)

Ingredients
1 cup besan (bengal gram flour) 1 1/2 tsp semolina (rava) 1/2 tsp citric acid (nimbu ka phool) crystals 1 tbsp sugar 2 tsp ginger-green chilli paste salt to taste 1 1/2 tsp fruit salt 1 1/2 tsp finely chopped green chillies 4 1/2 tbsp oil 1/2 tbsp lemon juice 2 tbsp powdered sugar 1 tsp mustard seeds ( rai / sarson) 2 pinch asafoetida (hing)

For The Garnish 1 cup sev 2 tbsp grated coconut 2 tbsp chopped coriander (dhania)

Method
1. Combine the besan, semolina, citric acid crystals, sugar, ginger-green chilli paste, salt and 1 cup of water in a bowl, mix well to make a batter of pouring consistency. 2. 3. 4. Just before serving, add the fruit salt and 2 tsp of water over it. When the bubbles form, mix gently. Pour half the batter into a greased 150 mm. (6) diameter microwave-safe container and microwave on high for 2 minutes. Allow it to stand in the microwave for 1 minute. 5. 6. 7. 8. 9. 10. 11. Repeat with the remaining batter to make one more batch of dhoklas. Keep aside to cool. Crumble the dhoklas lightly with your fingers to get khaman. Add the green chillies, 2 tbsp of oil, lemon juice and sugar, mix well and keep aside. Put the remaining 2 tbsp of oil in a small microwave-safe bowl and microwave on high for 40 seconds. Add the mustard seeds and asafoetida and microwave on high for 30 seconds. Pour the tempering on the khaman and mix well. Serve immediately garnished with sev, coconut and coriander.

Handy tip:

1.

Always use your hands while mixing the batter to break lumps of the besan, sugar and citric acid crystals.

Baingan Bhurta
Ingredients
2 brinjals (baingan / eggplant) 4 tbsp chopped onions 1 tsp chopped green chillies 1 tsp chopped ginger (adrak) 2 tsp coriander (dhania) powder 1 tsp chilli powder 1/2 tsp turmeric powder (haldi) 1/2 tsp garam masala 2 tsp ready-made tomato puree 4 tsp chopped tomatoes 1 tbsp oil salt to taste

For the garnish 1 tsp thinly sliced green chillies

Method
1. 2. Place the brinjals on the microwave turnable and microwave on HIGH for 5 minutes. De-skin the brinjals and keep the pulp aside. Combine the oil, onions, green chillies and ginger in a microwave-proof bowl and microwave on HIGH for 3 minutes stirring once in between after 1 minutes. 3. 4. 5. Add the brinjal pulp, coriander powder, chilli powder, turmeric powder and salt, mix well and microwave on HIGH for 1 minute. Add the garam masala, tomato pure and tomatoes, mix well and microwave on HIGH for 2 minutes. Serve hot garnished with green chillies.

Batata Poha ( Microwave Recipe)


Ingredients
2 cups thick beaten rice (poha) 1/2 tsp mustard seeds ( rai / sarson) 1/2 tsp cumin seeds (jeera) 3 to 4 green chillies , slit green chillies 1/2 cup chopped onions 1/4 tsp turmeric powder (haldi) 1/2 cup peeled and finely chopped potatoes 1 tsp lemon juice 1 tsp sugar (optional) 1 tbsp oil salt to taste

For The Garnish 1 tbsp grated fresh coconut 1 tbsp chopped coriander (dhania)

Method
1. 2. 3. 4. 5. 6. 7. Place the poha in a sieve and hold it under running water for a few seconds. Toss well to drain out all excess water and keep aside. In a microwave safe bowl combine the oil, mustard seeds, cumin seeds, green chillies and curry leaves and microwave on high for 2 minutes. Add the onions, turmeric powder and microwave for 1 minute. Add the potatoes, sprinkle little water, mix well and microwave for 3 minutes, stirring once in between. Add the poha, salt, sugar and mix well. Microwave on high for 2 minutes. Add the lemon juice and mix well. Serve hot garnished with the grated coconut and chopped coriander.

Tips 1. Handy tip : 2. If the poha gets too dry sprinkle a tablespoon of milk, mix well and serve immediately.

Dal Fry ( Microwave Recipe )


Ingredients
1/3 cup masoor dal (split red lentil) 1/4 cup chana dal (split bengal gram) 2 tbsp butter 1 tsp cumin seeds (jeera) 1/2 cup finely chopped onions 1/3 cup chopped tomatoes 1 tsp finely chopped green chillies 1 tsp finely chopped ginger (adrak) 1 tsp finely chopped garlic (lehsun) 1 tsp chilli powder 1/4 tsp turmeric powder (haldi) salt to taste For The Garnish 2 tbsp finely chopped coriander (dhania)

Method Combine the masoor dal and chana dal in a microwave safe bowl and microwave on high for 1 minute, without using water.
1. 2. 3. 4. 5. 6. 7. Blend the dals in a mixer to a coarse paste, without using water. Transfer the powder to the same microwave safe bowl, add 2 cups of water and microwave on high for 14 minutes. Put 1 tbsp of butter in a microwave safe bowl and microwave on high for 30 seconds Add the cumin seeds and onions, mix well and microwave on high for 1 minute. Add the tomatoes, green chillies, ginger, garlic, chilli powder, turmeric powder and salt, mix well and microwave on high for 1 minute. Add the boiled dal, coriander and the remaining 1 tbsp of butter, mix well and microwave on high for 3 minutes. Serve immediately garnished with coriander.

Darbari Subzi
Ingredients
1 cup cooked and diced potatoes 1/2 cup boiled green peas 2 tsp sesame seeds (til) 1/2 tsp cumin seeds (jeera) 1/4 cup onion rings 1 tbsp cashewnuts (kaju) 2 tsp raisins (kismis) 1/3 cup ready-made tomato puree 1/4 tsp garam masala 1/4 tsp turmeric powder (haldi) 1/2 tsp chilli powder 1 tbsp milk a pinch of sugar 2 tsp oil salt to taste For the garnish 1 tbsp chopped coriander (dhania)

Method
1. 2. 3. 4. 5. 6. 7. Place the sesame seeds on a microwave-proof plate and microwave on HIGH for 1 minute. Keep aside. Combine the oil, cumin seeds and onions in another microwave-proof bowl and microwave on HIGH for 3 minutes. Add the cashewnuts, raisins and 1 tablespoon water, mix well and microwave on HIGH for 2 minutes. Add the tomato pure, garam masala, turmeric powder and chilli powder, mix well and microwave on HIGH for 2 minutes. Add the potatoes, green peas, sesame seeds, sugar and salt, mix well and microwave on HIGH for 1 minute. Add the milk, stir once and microwave on HIGH for 1 minute. Serve hot garnished with coriander.

Dum Aloo ( Microwave Recipe)


Ingredients
For The Gravy 2 cups roughly chopped tomatoes 3 garlic (lehsun) cloves 25 mm (1) piece ginger (adrak) 8 whole dry kashmiri red chillies 2 tbsp cashewnuts (kaju) , broken 1 tsp cumin seeds (jeera) 1 tsp fennel seeds (saunf) 1 tsp chilli powder salt to taste

Other Ingredients 18 to 20 baby potatoes 2 1/2 tbsp oil 2 tsp butter 8 cardamoms 1 tbsp dried fenugreek (methi) seeds , roasted 1 tbsp honey salt to taste 1/4 cup fresh cream 1 tbsp finely chopped coriander (dhania)

Method
For the gravy

Combine all the ingredients along with 1 cups of water in a microwave-safe bowl, mix well and microwave on high for 4 minutes, stirring once in between after 2 minutes.

Cool the mixture slightly and blend in a mixer to make a smooth paste. Keep aside.

How to proceed

Wash and dry the potatoes. Pierce them all around with a fork and place them in a microwave-safe bowl and microwave on high for 6 minutes.

Place them in water for 5 minutes. Peel them and keep aside. Put 2 tbsp of oil in a microwave-safe bowl and microwave on high for 30 seconds. Add the potatoes, mix well and microwave on high for 2 minutes. Keep aside. Combine the butter and the remaining tbsp oil in another microwave-safe bowl and microwave on high for 40 seconds. Add the cardamom and the prepared gravy, mix well and microwave on high for 3 minutes, stirring once in between after 1 minutes. Add the potatoes, dried fenugreek leaves, honey and salt, mix well and microwave on high for 3 minutes. Add the cream and the coriander and mix well. Serve immediately.

Gajar Ka Halwa
Ingredients
2 cups grated carrot 1/4 cup milk powder 5 tbsp sugar 1/4 tsp cardamom (elaichi) powder 1 tbsp melted ghee

For the garnish 1 tbsp sliced pistachios and cashewnuts (kaju) 1 edible silver leaf (vark)

Method
1. 2. 3. In a glass bowl, combine the ghee and grated carrots. Cover with a lid and microwave on HIGH for 4 minutes. Add the milk powder, sugar, cardamom powder and mix well. Cover with a lid and microwave on HIGH for 2 minutes. Serve hot, garnished with the sliced pistachios, cashewnuts and varq.

Kalakand ( Microwave Recipe)


Ingredients
3/4 cup thinly grated paneer (cottage cheese) 8 tbsp milk powder 1 tsp cornflour 1/4 cup sugar 1/2 cup fresh cream

For The Garnish 1/2 tsp cardamom (elaichi) powder 2 tbsp almond (badam) slivers

Method
1. 2. 3. 4. 5. Combine all the ingredients in a 175 mm. (7) microwave-safe shallow dish and microwave on high for 5 minutes. Spread the mixture in the same dish using the back of a spoon into an even layer. Sprinkle the cardamom powder and almonds evenly over it and keep aside to cool completely. Cut into 18 equal pieces and refrigerate for at least an hour. Serve chilled.

Khandvi ( Microwave Recipe )


Ingredients
3/4 cup besan (bengal gram flour) 3/4 cup curds (dahi) mixed with 3/4 cup 1 tsp ginger-green chilli paste 1/4 tsp turmeric powder (haldi) a pinch asafoetida (hing) salt to taste 2 tbsp oil 1 tsp mustard seeds ( rai / sarson) (rai / sarson) 1 tsp sesame seeds (til) a pinch of asafoetida (hing) 4 to 5 curry leaves (kadi patta)

For The Garnish 3 tbsp grated coconut 2 tbsp chopped coriander (dhania)

Method Combine all the ingredients together in a microwave safe bowl and microwave on high for 4 minutes, stirring twice in between with help
of a whisk after every 1 minutes.

Spread the mixture on a smooth kitchen platform or surface. Allow to cool for 2 to 3 minutes. Cut the khandvi lengthwise at a distance of 37 mm. (1) in width to make equal sized strips. Carefully roll out each strip from one end to another end to form cylindrical rolls. Keep aside. Combine the oil, mustard seeds and asafoetida in a microwave safe bowl and microwave on high for 2 minutes. Pour the tempering on top of the khandvi. Serve immediately garnished with coconut and coriander

Masaledar Aloo Palak


Ingredients
3/4 cup cooked and mashed potatoes 3/4 cup cooked spinach (palak) puree 1 1/2 tsp ginger-garlic (adrak-lehsun) paste 3 tbsp onion paste 1 tbsp milk 1 tsp chilli powder 1 tsp chole masala 2 tsp oil salt to taste For the garnish 2 tsp cream

Method
1. 2. Combine the oil, ginger-garlic paste and onion paste in a microwave-proof bowl, cover with a lid and microwave on HIGH for 3 minutes. Add the spinach pure, potatoes, milk, chilli powder, Punjabi chole masala, salt and cup of water, mix well and microwave on HIGH for 2 minutes. 3. Serve hot garnished with cream.

Methi Mutter Malai


Ingredients
1 1/2 cups chopped fenugreek (methi) leaves 1/4 tsp cumin seeds (jeera) 1/2 cup green peas 1/2 cup milk 3 tbsp cream a pinch of sugar 2 tbsp oil salt to taste

To be ground into a paste 1 onion 1 green chilli 12 mm. (1/2") piece ginger (adrak) 1 clove of garlic (lehsun) 2 tbsp cashewnuts (kaju) 2 tsp poppy seeds (khus-khus)

Method
1. 2. Wash the fenugreek leaves, add 1/2 teaspoon of salt and leave aside for 10 minutes. Then, squeze out the water. In a glass bowl, combine 1 tablespoon of oil with the cumin seeds and fenugreek leaves and microwave on HIGH for 2 minutes. Remove and keep aside. 3. 4. 5. 6. In another glass bowl, combine the green peas with 2 tablespoons of water nad microwave on HIGH for 1 minute. In a glass bowl, add the remaining 1 tablespoon of oil, the prepared paste and microwave on HIGH for 2 minutes. Add the milk, cream, sugar, salt and the cooked fenugreek and peas and microwave on HIGH for another 2 minutes. Serve hot.

Mixed Dal ( Microwave Recipe )


Ingredients
2 tbsp green moong dal (split green gram) 2 tbsp masoor dal (split red lentil) 2 tbsp urad dal (split black lentil) 1 tsp turmeric powder (haldi) 4 tbsp butter 1 tsp cumin seeds (jeera) 3/4 cup finely chopped tomatoes 1/2 cup finely chopped onions 1 1/2 tsp chopped green chillies 2 tsp chopped ginger (adrak) 1 tsp chilli powder 4 tbsp chopped coriander (dhania) salt to taste

Combine all the dals along with 1 cups of hot water in a microwave safe bowl and soak for 30 minutes. Add the salt and turmeric powder and mix well. Cover with a microwave safe lid and microwave on high for 15 minutes or until the dals are cooked.

Put the butter in another microwave safe bowl and microwave on high for 30 seconds. Add the cumin seeds and microwave on high for 30 seconds.

Add the tomatoes, onions, green chillies, ginger, chilli powder, coriander, cooked dals and salt, mix well and microwave on high for 4 minutes, stirring once in between after 2 minutes.

Serve immediately.

Mock Pizzas
Ingredients
4 burger buns 2 tbsp mozzarella cheese

To be mixed into a topping 1 cup finely chopped tomatoes 2 tbsp finely chopped onions 2 tbsp finely chopped capsicum 1/2 tsp grated garlic (lehsun) 1 tsp finely chopped basil 1 green chilli, finely chopped 2 tsp tomato ketchup salt to taste

Method
1. 2. 3. Cut the buns horizontally and microwave them on HIGH for 30 seconds. Top with the filling mixture and sprinkle the cheese on top. Microwave on HIGH for 30 seconds.

Moongdal Khichdi
Ingredients

3/4 cup uncooked rice (chawal) 3/4 cup sprouted moong 2 to 3 pinches asafoetida (hing) 1/4 tsp turmeric powder (haldi) 2 tbsp ghee

To be mixed together in masala mixture 2 tsp coriander-cumin seeds (dhania-jeera) powder 2 tsp sugar 1 tsp chilli powder 2 tbsp grated fresh coconut 2 tbsp chopped coriander (dhania) a pinch asafoetida (hing) salt to taste

Method
1. 2. 3. 4. 5. Wash the rice. Drain. Wash the moong sprouts. Drain. Put the ghee in a glass bowl and microwave on HIGH for about 30 seconds. Add the rice, moong sprouts, asafoetida, turmeric powder, masala mixture and 2 1/2 teacups of water. Cover and microwave on HIGH for about 15 minutes, stirring in-between after every 5 minutes.

Orange Marmalade ( Microwave Recipe)


Ingredients
1 cup fresh orange juice 1 cup grated raw papaya 1 tbsp orange rind 1/4 cup sugar a pinch of citric acid (nimbu ka phool) mixed with 1 tablespoon

Method
1. 2. 3. 4. Combine all the ingredients except the citric acid mixture in a large microwave safe bowl and mix well. Microwave on high for 15 minutes stirring once in between. Add the citric acid mixture and mix well. Cool and store refrigerated in an air-tight container.

Paneer Tikka
Ingredients

2 cups paneer (cottagte cheese) , cut into 50 mm (2") cubes 1/2 cup capsicum, cut into 50 mm. (2") pieces 1/2 cup thick curds (dahi) 1 tsp ginger (adrak) paste 1 tsp garlic (lehsun) paste 2 tsp chilli powder 1/2 tsp dried fenugreek leaves (kasuri methi) 1/2 tsp garam masala 2 tbsp chopped coriander (dhania) 1 tsp chaat masala 1 tbsp oil salt to taste

Method
1. Combine the curds, ginger paste, garlic paste, chilli powder, kasuri methis, garam masala, coriander, oil and salt and mix well to prepare a marinade. 2. 3. 4. Add the paneer and capsicum to it and keep aside for 15 minutes. Arrange the marinated paneer and capsicum pieces in a shallow galss dish and microwave on HIGH for 3 minutes. Serve hot, sprinkled with the chaat masala.

Panha ( Microwave Recipe)


Ingredients
1 cup raw mango , peeled and cubed 1/2 cup sugar 1/2 tsp cardamom (elaichi) powder saffron (kesar) strands mixed with 1 tablespoon water

Method
1. 2. 3. 4. 5. Combine the mangoes with cup water in a microwave safe bowl and microwave on high for 2 minutes. Add the sugar and microwave on high for another 2 minutes. Add the cardamom powder and mix well. Cool completely. Grind in a blender to make a smooth pure. Add the saffron mixture and mix well. Store refrigerated in an air-tight container.

How to proceed When you wish to serve, take 3 to 4 tablespoons of this mixture in a glass and top it with water and ice and serve immediately.

Parwal Aur Aloo ki Subzi ( Microwave Recipe)


Ingredients

To Be Mixed Into A Masala Mixture 1 cup freshly grated coconut 1 cup finely chopped tomatoes 1/2 cup finely chopped coriander (dhania) 1/2 tsp turmeric powder (haldi) 2 tsp chilli powder 3 1/2 tsp coriander-cumin seeds (dhania-jeera) powder 1/4 tsp garam masala 4 tsp sugar salt to taste

Other Ingredients 2 cups peeled and halved snake gourd (padwal) 1 cup potatoes , peeled and cut into fingers 2 tbsp oil salt to taste

Method
1. Combine the snake gourd, potatoes, oil, salt and 1 tbsp of water in a microwave safe bowl, mix well and microwave on high for 8 minutes, stirring thrice in between after every 2 minutes. 2. Add the prepared masala mixture and 1 tbsp of water, mix well and microwave on high for 3 minutes, stirring once in between after 1 minutes. 3. Serve immediately.

Poha Chivda ( Microwave Recipe)


Ingredients
3 cups thin beaten rice (poha) 1 tsp mustard seeds ( rai / sarson) 1 to 2 green chillies , finely chopped 4 to 6 curry leaves (kadi patta) 1 tbsp unsalted peanuts 2 tbsp roasted chana dal (daria) 1/4 tsp turmeric powder (haldi) 1 tsp powdered sugar a pinch of citric acid (nimbu ka phool) 1 tbsp oil salt to taste

Method
1. 2. 3. 4. Place the poha in a shallow microwave safe dish and microwave on high for 2 minutes. Keep aside. In another microwave safe bowl, combine the oil and mustard seeds and microwave on high for 2 minutes. Add the green chillies, curry leaves, unsalted peanuts, roasted chana dal and turmeric powder and microwave on high for 1 more minute. Add this to the poha. Mix well and microwave on high for 1 more minute.

Add the sugar, citric acid and salt and mix well.

Sabudana Khichadi
Ingredients
1 cup sago (sabudana) 1/2 cup roasted peanuts, crushed 2 medium potatoes, cubed 1/2 tsp cumin seeds (jeera) 2 green chillies, slit 2 tbsp oil salt to taste

Method
1. 2. Wash the sago. Drain and keep aside for about 2 hours. If necessary sprinkle a little water to moisten the sago. In a glass bowl, combine the oil, cumin seeds, green chillies and potatoes. Cover with a lid and microwave on HIGH for 2 minutes until the potatoes are tender. 3. 4. Add the soaked sago, peanuts and salt and mix well. Cover with a lid and microwave on HIGH for 2 minutes. Serve hot with green chutney or curds.

Shahi Rabdi ( Microwave Recipe)


Ingredients
1 cup milk 1 cup grated paneer (cottage cheese) 1/2 cup condensed milk 1/4 tsp cardamom (elaichi) powder a few saffron (kesar) strands 1 tsp ghee a few drops of rose essence

For The Garnish 1 tbsp chopped pistachios

Method
1. 2. Mix all the ingredients together in a large microwave safe bowl and microwave on high for 6 minutes. Serve chilled garnished with the chopped pistachios.

Tips

1. Fill the microwave safe bowl to only its height, leaving enough space for the milk to rise in the microwave, without spilling over.

Tandoori Aloo
Ingredients
1 cup baby potatoes 1 tbsp cream 1/4 tsp dried fenugreek leaves (kasuri methi) 1 tbsp oil salt to taste

To be ground into a paste 4 whole dry kashmiri red chillies 2 cloves garlic (lehsun) 12 mm. (1/2") piece ginger (adrak) 2 tsp coriander-cumin seeds (dhania-jeera) powder

Method
1. Wash the potatoes thoroughly, pierce them with a fork and place them all around the circumference of the microwave turntable. Place a glass of water in the centre to prevent the potatoes from getting wrinkled. 2. 3. 4. 5. Microwave on HIGH for 5 to 6 minutes until the potatoesare soft. Heat the oil in a glass bowl, add the prepared paste and salt and mix well. Microwave on HIGH for 1 minute. Add the potatoes, cream and kasuri methi and microwave on HIGH for 2 minutes. Serve hot.

Tinda aur Saunf ki Subzi


Ingredients
6 round gourds (tinda), peeled and cut into quaters 1 tsp fennel seeds (saunf) 1/2 tsp cumin seeds (jeera) powder 1/2 tsp coriander (dhania) powder a pinch of turmeric powder (haldi) 1/2 tsp nigella seeds (kalonji) 1/2 tsp chilli powder 2 tsp oil salt to taste

To be blended to a tomato pure 1/2 cup blanched and chopped tomatoes 3/4 tsp fennel seeds (saunf) 2 green chillies

Method

1.

Combine the oil, fennel seeds, cumin powder, coriander powder, turmeric powder, nigella seeds and chilli powder in a microwave-proof bowl. Mix well and microwave on HIGH for 1 minute.

Add the prepared tomato pure, tindas and salt and microwave on HIGH for 3 minutes, stirring once in between after 1 minutes. Serve hot with rotis.

Biscuit Chocolate Cake In Microwave


Ingredients
190 gms parle g biscuits , powdered 2 tbsp cocoa powder 2 tbsp drinking chocolate powder 2 tbsp sugar powder 2 tbsp chopped mixed nuts 5 drops vanilla essence 5 gms fruit salt 150 to 200 ml milk butter for greasing plain flour (maida) for dusting

Method
1. 2. 3. 4. 5. 6. Combine the biscuit powder,cocoa powder, drinking chocolate powder, sugar powder, fruit salt and sieve 2 times. Transfer in a bowl, add vanilla essence and slowly add 150 ml milk to the seived mixture while whisking continuously. Add more milk if required to form a batter of pouring consistency. Add the mixed nuts and mix well. Pour into a greased and dusted microwave safe bowl and microwave on HIGH for 4 minutes. Cool and unmould and cut to pieces and serve.

Khoya In Microwave
Ingredients
1 cup milk powder 1/2 cup melted ghee milk to make batter

Method

Mix milk powder and ghee and add milk as required to make a thick batter. Cover it and microwave on high for 2 minutes. Stir it and cover it again and microwave for another minute or two. Allow to cool khoya is ready to be used in any dessert.

Mango Microwave Cake


Ingredients

1 cup flour 2/3 cup sugar 1/2 cup fresh cream 1 tsp butter (for greasing dish) 1 1/2 tsp baking powder 2 eggs 2 large mangoes

Warm saffron and powder . Break bread into tiny pieces , mix with ghee . Micro med for 3 mts and micro med low for 5 mts, till crisp , stirring once or twice in between.

Veggy's Pizza
Ingredients
6 pizza base 2 tbsp oil 2 finely chopped capsicum 2 sliced onions 6 tbsp tomato ketchup 2 finely chopped tomatoes 500 gms grated mozzrella cheese 200 gms chopped black olives salt to taste freshly ground black pepper powder to taste

Method
1. 2. 3. 4. 5. 6. Heat the 1 tbsp of oil in a pan and fry the onions for 3 minutes on a medium flame. Keep aside. In the same pan heat the remaining oil and fry the capsicum for 3 minutes, till it turns little soft. Keep aside. Put the pizza base in a microwave on a grill mode and microwave on high for 3 minutes or till one side of the base becomes brown. Spread 1 tbsp of the tomato ketchup on the other side of the base. Spread some fried onions, capsicum, tomatoes and mozarella cheese evenly on it. Spread the black olives and sprinkle salt and pepper on it and grill it in the microwave on high for 5 minutes or till the cheese completely melts and spreads like a coating on the base. 7. Serve hot.

Cheese and Oatmeal Cookies


Ingredients
1/2 cup butter 1/4 cup cheese spread 1 tsp cumin seeds (jeera) 1/2 tsp crushed black pepper (kalimirch) 1 cup whole wheat flour (gehun ka atta) 1/4 cup quick cooking rolled oats

Other ingredients butter for greasing

Method
1. 2. Cream the butter and cheese spread till light and fluffy. Add the cumin seeds, black pepper, wheat flour and oats and knead gently into a soft dough.

Roll out the dough into a sheet of 6 mm. (1/4") thickness. Prick with a fork at regular intervals. Cut out 12 to 14 circles using a 50 mm. (2") cookie cutter and place them on a greased baking tray. Bake in a pre-heated oven at 180C (360F) for 15 minutes or till the cookies are golden brown.. Remove the cookies from the oven and allow them to cool. Store in an air-tight container.

Delicious Sandwiches
9 bread slices To be mixed for the Apple spread 1 apple, grated 1 tbsp cheese spread salt and black pepper (kalimirch) powder to taste

To be mixed for the Carrot spread 3/4 cup grated carrot 2 tbsp cheese spread salt and black pepper (kalimirch) powder to taste

Method
1. 2. 3. 4. Apply the apple spread on one bread slice. sandwich with another slice of bread. Spread a layer of the carrot spread and sandwich with a third slice of bread Repeat to make 2 more sandwiches. Remove the crusts and cut into 4 triangles.

Dry Fruit Chikki ( Tififn Treats For Kids )


Ingredients
1/4 cup sesame seeds (til) 1/4 cup thinly sliced almonds (badam) 1/4 cup thinly pistachio slivers 1/3 cup grated jaggery (gur) 1 1/2 tsp ghee for cooking and greasing

Method
1. 2. 3. Heat a small kadhai, add the sesame seeds and dry roast on a medium flame for a few seconds. Remove and keep aside to cool. In the same kadhai, add the almonds and pistachios and roast on a medium flame for a few seconds. Remove and keep aside to cool. Heat the ghee in a deep pan, add the jaggery and cook on a slow flame till the jaggery melts and caramelizes, while stirring continuously (it should form a hard ball when you add a drop in cold water). Remove from the flame. 4. 5. 6. Add the roasted sesame seeds, almonds and pistachio nuts and mix thoroughly. Pour the mixture immediately on a greased thali or a smooth stone surface. Roll it into an even sheet using a greased rolling pin.
