GONDAR ELFORA ABATTOIR Gondar ELFORA abattoir is established at appropriate site ,with the natural slop of the surface

facilities adequate drainage. The site is also selected based on the availability of adequate and potable water supply ,electric supply and acessable to main road.At the time establishment there were no any residential houses near the compound ,but now there is one brewery factory and some residential houses are constructed near the compound.

The abattoir lay out and design The abattoir is fenced and has lockable gates in order to control unauthorized vehicles person and animals.In the compound, there is a liner flow pattern with the animals reception on one side and the removal of products on the other side. There were no flow of rain water and runoff from the dirty areas in to the abattoir.The lairage and waste disposal areas are situated at the lowest point of the compound. Internal operational facilities 1. Lairage facility The lairage for ante-mortem inspection is constructed at lower point from the slaughterhouse and away from the main passageway of people,vehicles and animals.The lairage is roofed with corrugated iron sheet, In the lairage, anials are provided with ample wather but feed is notgiven at all. Animals are kept in the lairage for 12-16 hours, if the animals are coming from the fattening,which are located in Gondar town.If animals are transported from another place with long journey, they, are allowed to take rest not less than 3 days with in the owners house but not in the lairage 2. Slaughter House The slaughter hall includes the following facilities: Lighting: An artificial lighting provides adequate lightthroughout the meat plant. Ventilation: Natuiral ventilation is provided through wire mesh stretched between the side walls and the floor. Floor and wall finishes:The wall of the slaughterhouse is made up of cement,concret,and it is faced with smooth,hard,imp[ermable material, with white ceramic that allows minimal lodgment of dirty substances.

Stunning area:The area where animals are stunned is constructed in such a way that a metal wire is constructed about one meter in width to the opposite wall.Animals to be stunned are entered to the demarcated area through the entry side. A sharp stunning knife is used for stunning and animals are stunned by striking the spinal cord near to the medulla oblongata. Bleeding: After the animals are stunned and became fully unconscious,bleeding is effected by cutting the jugular vein including the trachea and esophagus using a knife manually. Animals are left to bleed for 6-30 minutes depending on the number of animals slaughtered at a time. Roof: The roof of the slaughter house is made up of corrugated iron asheet. Drainage: the floor of stunning area and bleeding area is designed in a steep slop gradient towards the drainage valley. Overhead rail: after stunning the carcass is conveyed by lifter with electric system and capable of lifting about 600kg weight ,along an overhead rail system and bleeding is done. The carcass then travelled and stopped manually at the dressing area, dreassing is takes place in different stage each undertaken by separate operater as the carcass reaches them. In the over head rail system, the carcassis suspen ded with adequate ceiling height for gravitating the carcass and to facilitate the dressing. After skinning, the visceral orgabs are separated from the carcass in the evisceration area . The green offal are examined and convoyed to the the green offal washing area, through an opening ,which communicate the evisceration area with the offal washing area.Red offal are separated from trhe carcass and convoyed to the red offal examination room. If the number of animals slaughtered is few , the carcass is stayed un- eviscaerated for only about 45 minutes. Ater evisceration thje carcass is examined whileit is haged and splitted using an axe(which ois stainless steel) and there are stainless steel tables over which the process of splitting undertaken. Boiler: in Gondar ELFORA abattoir , both cold and hot potable water are available. Theboiler is used to warmth watyer,which oizs used for cleaning

and disinfecting equipments such asaxes, tables, knifezs,etc. and washing of thje side walls .This is mainly because fat lodged in the equipments amnd on the side walls are easily cleaned using hot water. Doors: the slaughter hall has one door for entry of the animals during slaughtering and is found on the the stunning and bleeding side area. Another main door is an entry and exit forf abattoir workers while loiading of the carcass in to the truck. Other doors which are present in the slaughter hall includes an entry and exit top the red offal examination room and an entry to the equipments storage houser and work office.
