Finding Joy in Canning and Freezing Foods This very informative workshop was presented by Gene and Jan Kuhns at Vashons Food Summit on March 5, 2010 and is now available on DVD. In a very engaging style, Gene and Jan cover water-bath canning, pressure canning, steam juicing, dry-pack canning, freezing, and much more in an hour and twenty minutes. Available at the Resource Table for $5.00, or contact Cathy (see bottom of page).

Food Preservation Tool Library:


Thanks to a Green Seed grant from Sustainable Vashon, Vashon has a Food Preservation Tool Library. Equipment, so far, includes: Apple Peeler/Slicer/Corer Dehydrator Food Mill/Strainer Home Canning Kit 2 Pressure Canners Raw Food Juicer Steam juicer Vacuum Packer 2 Water Bath Canners Equipment may be checked out, by Vashon residents, for up to three days at a time for a suggested donation of $5.00. A $50 damage/replacement deposit is required. For more information, contact Cathy (see bottom of page). Also available (with different lending requirements) is equipment for processing poultry for meat.

The Vision For Vashon Food Security Working Group. It has been said that the best food security is a well-fed neighbor. Formed in the Spring of 2009, the Food Security Working Group seeks to empower our community to become more food secure. We provide educational opportunities to help households learn more about where their food comes from and be more involved in their food procurement and preparation. We also seek to improve food quality and affordability on the Island. We were instrumental in making a weekend-long Food Summit happen in March 2010. (See VashonFoodSummit.org) We periodically provide classes in raising and preparing food. This is our second (we hope, annual) Food Preservation Fair. We would love to have you join us.
