Apple filling Apples 900-1000 g (32-35 oz.) Sugar 1-2 table spoons Cake batter Butter 280 g (9.9 oz.) Sugar 230 g (8.1 oz.) Eggs 260 g (9.2 oz.) Flour 300 g (10.6 oz.) Coconuts 70g (2.5 oz.)

Streusel (crumbles) Butter 160 g (5.6 oz.) Sugar 140 g (4.9 oz.) Flour 200 g (7.1 oz.) Coconuts 3 table spoons

Lets start with the apples. Any firm textured (sour) apple is fine with this recipe. Here, I use Royal Gala apples. Peel the apples and cut them into thin slices of roughly 3 mm (0.1 inch).

Cook the apples in a large saucepan together with the sugar over medium-high heat. Stir constantly until the juice from the apples is reduced and the apples softened. Then, let the filling cool down. If you want, you can add 1/2 tea spoon of cinnamon.

Next, prepare the baking pan. You already know how to do this from previous recipes Grease the edges and two lines across the center with butter, so that the baking paper nicely sticks to the pan. Cut the edges with a scissor, then press the baking paper tightly onto the baking pan.

Cake batter With an electric mixer, mix together the butter (softened, at room temperature) and sugar until the mixture is light and fluffy. This takes several minutes. In a separate bowl, stir the eggs.

Add the eggs little by little. (In the video, I do it in three steps.) For the best results, the eggs should have room temperature.

Add the sifted flour and coconuts. Mix carefully with a spatula until all ingredients combined. Do not overmix, though.

Pour the batter onto the baking pan and evenly distribute with a dough scraper (or similar tool). Set aside. Next lets prepare the Streusel

Mix the (soft) butter and sugar very well. Then, add the sifted flour

Rub the dry ingredients into the butter until the mixture turns into crumbles. You have to do this quickly and make sure not to overmix. Otherwise it turns into normal cookie dough. :o So, watch the video carefuly and notice that I do not grab or kneed the dough. I use my hand like a hook (photo above) and just loosely mix the crumbles.

Now its time to assemble the cake. Cover the batter with the cooled apple filling. Finally, sprinkle the Streusel and coconuts on top of the apple filling. If the crumbles are too soft, just put them in the fridge/freezer for some minutes. Bake for about 50 minutes in the preheated oven at 180C (356F) until the Streusel turns golden brown.

After baking, let the cake cool down. Cut the cake into 16 pieces and powder with icing sugar before serving.
