BROWN RICE

Paddy Rice Hull = Brown Rice

(Palay Ipa = Pinawa)
Whole Rice

Brown Rice
Advantages
Disadvantages

Light

polishing of grain for <3 sec can significantly improve the cooking and eating quality of brown rice (Tamang et al, 2011) Light polished brown rice is more susceptible to rancidity. Light polishing of grain exposes surface oil. Thus, hydrolysis of oil immediately occurs

GRAIN QUALITY EVALUATION

PHYSICOCHEMICAL CHEMICAL PROPERTIES
-

Determines the cooking, eating and processing quality of rice samples. *Amylose Content ( 20-25%) *Moisture content (12-14%) *Crude Protein

AMYLOSE CONTENT
The sample is dispersed in alkali solution and subjected to iodine colorimetry.

MOISTURE CONTENT DETERMINATION

Water is removed from sample by volatilization through heating to the required temp. Weight loss determines the moisture content of the sample. Range: 12%- 14%

CRUDE PROTEIN DETERMINATION

-this is based on Kjeldahl method.
