Definisi

 Teknologi fermentasi adalah proses yang menghasilkan


produk oleh kultur massa mikroorganisme.
 Dari aspek biokimia: proses yang menghasilkan di mana
senyawa organik bertindak baik sebagai donor elektron
maupun akseptor elektron terakhir.
