Anise-Flavored Spirits

Anise-based distilled
spirits are produced by
either infusion or the
addition of flavoring and
have a high alcoholic
content.

Anise-Flavored Spirits
ABSINTHE
Origin-In the Canton of Neuchatel in
Switzerland.
Is an aromatic, yellow green distilled
spirits flavored with oil of
wormwood.
The principal botanicals are grand
wormwood, green anise & florence
fennel which are often called holy
trinity.

Anise-Flavored Spirits
Many other herbs such as petite
wormwood(Artemisia pontica),
hyssop, melissa, angelica, juniper,
nutmeg are used.
It is dry, bitter, licorice like flavor
and herbal aroma.
ABV(45-74%) highly alcoholic.
One part of anise distilled spirit
to 5 parts of water.
Served in a Reservoir glass with

Anise-Flavored Spirits
Arak
It is the traditional alcoholic beverage of
Lebanon mainly, and Syria, Jordan
and Iraq on second note.
It is a clear, colorless, unsweetened
aniseed- flavored distilled alcoholic drink.
Arak or Araq is a highly alcoholic spirit
(50%-63% Alc. Vol.)

Approximately 1/3 Arak or


2/3 water in a traditional
Lebanese water vessel
called “Ibrik”, in Arabia.
The mixture is poured in
small ice filled cups, this
dilution causes the clear
liquor to turn a translucent
milky-white color.

Anesone- Italy
Anise liqueurs, anise-flavoured liqueurs,
or liqueurs d’anis is a category of liqueurs
that are flavoured with either anise, star
anise, or licorice.
Examples include anisette and pastis from
France, ouzo and mistra from Greece,
anesone and sambuca from Italy, anís and
ojén from Spain, and kasra from Libya.
Substitutes: aniseed (finely ground),
herbal liqueur or anise extract.

Ouzo – Greece & Cyprus


Ouzo is traditionally
mixed with water,
becoming cloudy white,
sometimes with a faint
blue tinge, and served
with ice cubes in a small
glass.

Ouzo can also be drunk,


straight, from a shot
glass.
Ouzo contains usually
around 40% ABV
Ouzo production does
not include any
fermentation or multiple
distillations

Raki – Albania & South Slavic
It is an alcoholic beverage that is
produced by distillation of
fermented fruit.
It is a popular beverage through
the Balkans.
Its alcohol content is normally
40% ABV.

Normally Rakia is colorless, unless
herbs or other
ingredients are added some
types of Rakia are kept
in wooden barrels for extra
aroma & a golden color.
It is supported to be drunk from
special small glasses
which hold from 0.03 to 0.05L.
In Bulgaria Rakia is served with
milk salad, pickled vegetables

Pastis- France
Each brand has its own
secret formula, but in most,
if not all pastis, you'll find:
Star Anise
Licorice
Spices
Herbs
Sugar
It has 45-50% ABV 12
Pastis is consumed in 1:5 ratio.
This drink is consumed cold and
is considered as a refreshment
for hot days.
Pastis is probably one of the
most popular beverages in
France where 130 million litres
are sold each year (more than 2
litres per inhabitant).

GRAPPA
It is a distillate made primarily
from the skins, pulp and seeds
of grapes.
In Italy Grappa is made by
distillers collectively known as
Grappaioli.
Grappa is divided into 2 types
Pregiate
(premium) and
Correnta( standard or normal).

GRAPPA
Grappa can be a blend of
many different grape variety
or can be made from a
single grape variety. (Grappa
di monovtigno).
It has ABV between 35 &
60%
It is from Italian origin.
Some producers of Grappa:
Nonino, Berta, Sibona, Nardini,
Jacopo, Poli, Brotto, Domenis.

is infused
with or
distilled from
fresh fruits.

CALVADOS
Calvados – French region of
Basse Normandie
It is an apple brandy.
The fruit is picked and
pressed into a juice that is
fermented into a dry cider.
It is then distilled into 
Eau de vie.

After two years ageing


in oak casks, it can be
sold as calvados.
The longer it is aged
the smoother the drink
becomes.

Cachaça

Cachaça-Brazil
It is a distilled spirit produced in
Brazil from fresh sugarcane juice
and is often associated with rum
and the popular cocktail, the
caipirinha.
It is also known as Augardente,
Pinga, Caninha.
It is Typically between 38% to 54%
ABV

applejack
It is a strong alcoholic beverage
produced from apples, popular in
American Colonial period and
thought to be originated from the
French apple brandy Calvados.
Applejack is either made by
concentrating hard cider, either by
the traditional method of freeze
distillation or by true evaporate
distillation.
The term Applejack derives from
jacking, a term for freeze distillation.22

It has 30%-40% ABV.
Slightly sweet and usually tastes
and smells of apple.
In New Jersey, Applejack was used
as currency to pay road
construction
crews during the Colonial period.
A slang expression for the beverage
was Jersey lightening.

Tequila is produced in
Mexico.
It is a liquor distilled
from the fermented
juice of the blue
variety of the agave
plant.
Tequila is most often
made at a 38%-40%
ABV but can be
produced between
