DETERMING THE VITAMIN C CONTENT IN VARIOUS FOOD JUICE

PROBLEM STATEMENT
Do different types of fruit juices contain similar amounts of vitamin C?

HYPOTHESIS
Lime juice contains a higher concentration of vitamin C compared to orange juice and guava juice.

VARIABLES
Manipulated Responding Fixed

Variable = __________ Variable = __________ = __________

Variables

MATERIALS
Dichlorophenolindophenol (DCPIP) solution ( Blue Solution ) 0.1% ascorbic acid solution ( Colorless Solution ) Freshly prepared i) Guava juice ii) Orange juice iii) Lime juice

APPARATUS

Beakers 50 ml

Plastic sieve Knife

A Syringe (1 ml)

Syringes (5ml)

How to prepare the juice?

Cut your fruit using knife

Guava Lime Orange

Squeeze the lime and the orange and then smash the guava with lesung batu.

Used a sieve to collect the juice

Put the juices into the beaker

PROCEDURES
1.Draw up 1 ml of DCPIP solution using a 1 ml syringe and add into a beaker. 2.Draw up 5 ml of 0.1% ascorbic solution using syringe (5 ml). 3.Record the initial volume of ascorbic acid solution. 4.Place the end of the 5 ml syringe into the DCPIP solution. 5.Add one drop the ascorbic acid solution to the DCPIP solution and shake gently. Continue adding the ascorbic acid solution drop by drop until DCPIP solution becomes colurless. * Record the final volume of ascorbic acid solution. 6.Repeat steps 1 to 5 by replace the ascorbic acid solution with freshly squeezed guava juice, lime juice and orange juice. 7.Tabulate the result. Calculate the % and concentration of Vit. C in each juices.

1)

1 ml DCPIP

Draw up 1 ml syringe with DCPIP

Transfer the DCPIP into beaker (50 ml)

Draw up 5 ml syringe of 0.1 % 0.1 % Ascorbic acid ascorbic acid and record the initial volume. DCPIP solution

2)

Add ascorbic acid drop by drop into the beaker that contain 1 ml of DCPIP

3) Stir gently. Add the ascorbic acid until DCPIP become colorless Blue solution Colorless 4)

colorless solution

5) Record the volume of ascorbic acid used in the syringe.

Repeat step 1 ) 5) by replacing ascorbic acid with guava, lime and orange juices.

Result
Solution / fruit juices 1 Ascorbic acid Lime juice Guava juice Volume of solution / fruit juices reading 2 3 Average Vit. C concentration in solution / fruit juices (mg cm ) % of Vit. C in solution / fruit juices ( %)
